Distinguished by red wax on the 500 ml bottle. Jim Beam barrel fermented Guillemot. Single barrel/not blended. Fermented atop 45 lbs of local tart cherries.

Bottle @ Stephen’s house, courtesy of Steve_0. Thanks! Pours a dark brown appearance with a brown head. Rich black cherry, a bit spicy whiskey, light grape, mild caramel/chocolate, somewhat herbal, somewhat spicy aroma. Somewhat tart, rich berry/cherry, chocolate, somewhat woody, whiskey, tangy flavor. Kind of an interesting beer.

Pours a deep mahogany brown with a finger of eggshell foam. The nose is earthy barrel, wet leaves, vinous cherry and a touch of chocolate and bourbon as well. The palate is a good balance between acidic vinous cherry, round chocolate brownie sweetness and traces of boozy bourbon barrel funk. Nice flowing palate that finishes with a balanced complexity ! Tasty.

Bottle from the release. Served in a Tired Hands wine glass. Really nice cherry presence along with a touch of bourbon and oak. Mild chocolate. Medium body. Faint acidity. Pretty nice and the cherry is a really nice addition. Nice and tart without being too fruity.

Aroma of cherry, tart funk and slight sugar. Pours hazy brown with slight film. Taste is tart with iron, cherry, slight oak notes and a cellar funk. Fairly one dimensional.

Murky black red with a small, light tan head that left nice lacing on the glass. Aroma of vanilla, dark fruits, cherry, bourbon. Taste of dark fruits, vanilla oak, cherries, bourbon, and dry, tannic wood in the finish. I liked the nebula better.

Pours dark murky brown unclear as well with a creamy beige head. The aroma brings some sweet yeast and funky sour cherry with a bit of the Bean barrel influence. Flavors bring the Bean barrels, some spicy whiskey, with notes of the yeast a bit sour here too, like in the Nebula.

Bottle at James’ place. Pours deep amber with a thin beige head. Grape, cherry, and dark fruits, just a little bit of bourbon, a hint of tartness, and light spicy notes. I don’t know how the hell all that came together so well but this was really damn good.

Dark brown body with some chestnut highlights, medium tan head, spotty lacing. Nose shows cola, cherries, chocolate, vanilla, and vinous notes. Flavor displays more whiskey barrel influence than the nose and the cherries are more muted. Medium bodied, soft carbonation, light acidity, rounded finish.

Bottle at James’ place for a tasting. Pours a deep brown with a thin beige head. Lightly funky on the nose, roast and a bit of wood. Medium bodied, funky with some vinous notes, light oak. Tangy on the finish, lingering light funk. Damn good work Jean.
