COMMERCIAL DESCRIPTION
Editor’s Note: This is tap only. If you had a bottled version, you had either Guillemot Nebula (375mL black wax) or Guillemot Prunus (500mL red wax).

Our dark and dense Saison fermented in both Stainless and Wine barrels (roughly 50/50 split) with resident yeast and bacteria.

Murky dark pour with tan head. Aroma is insanely strong vinous wine dominating everything. Taste is lightly sweet up front with tons more wine and a really dry semi tart finish. The wine barrel is way too strong for me.

500ml bottle (black wax) in a tulip. Pours near black with a beige head. Aroma of sourness, some chocolate and roasted malts, some dark fruits, and light oak. Flavor the same with a nice blend. Average texture. A cool beer but dark sour beers aren’t my favorite.

Draft. Black pour with tan head. Dark chocolate, oak, and tart fruit aromas. Chocolate, mild roasted, raspberries and tart fruit Flavors. Less sweet and more fruit forward then nebula.

Hand bottle from FlandersNed-thanks, Steve! Slightly cloudy brown. Malty nose, like an old ale, with some dark fruit/red wine character. Taste does a 180 with plenty of malt, but unexpected sour bite you wouldn’t guess from the nose. Nice red wine like character. Bit flat, but that’s to be expected considering the source. Very smooth and complex at the same time. Probably would rate higher fresh so grain of salt here....

Pour is dark brown with a tan head. Nose has a hint of metal, spicy yeast and a touch of cream, present roasted barley note with a touch of sweetness and a hint of currant. Taste has a strong roasted barley presence, lighter yeast note, sweet lemon with a fairly sweet currant/berry note. Lighter carbonation, light body and insanely drinkable soft feel. Roast lingers, drinkable body and nice sweetness balances.

Picked up in a trade from Phillycraftbeer. Thanks homie. Pours like a porter with near black hue and darker tan head. Aromas of lactic Farnese, some fruit, and some roast. Flavors of roast, light chocolate, some dark chocolate, spice, and nice amount of tartness. Kind of a sour stout. Really pretty solid.
