Bottle, Batch 1. Reviewed from two tastings (August 2013, Nov 2013). Thanks TheEpeeist for the first and bytemesis for the second! Aroma is rather vinous and funky with nice buttery chardonnay character, musty wood, hay, grass, citrus, lemon and sour grain. Very rustic indeed. Pours a pale cloudy yellow with a small soapy white head that hangs out for a while. Nice rings of lace as well. Taste follows pretty darn closely with an excellent tangy lemon bread, citrus, white wine, light butter, honey and grainy undertones. Almost seems like the epitome of rustic barrel aged saisons. As much as I love Saison Bernice, it tends to be more on the lactic side where this is grainy, doughy and lemon forward. I think it has a bit of an edge with more barrel nuances. Body is on the lighter side with medium carbonation. Finish is lightly tart, with some tannins and citrus. Definitely a top 3 saison for me.

UPDATED: FEB 3, 2014 1 day old batch 3 bottle. Near transparent gold, fizzy white head lasts briefly before dropping to the appearance of an effervescent cider. Cider like pear-heavy nose, delicate passion fruits dancing softened by the vanilla before considerable oak and heavy dust throughout. With warmth the sharpness blows off for intoxicating perfume notes. Cider-esque flavor, high acidity and dry considerable pear and apple skin sourness across the whole palate through to the bone dry, lightly oaky end that drops off like a cliff. Esters emerge with warmth, bubblegum hints and lots of dry grass. Maybe too delicate for its own good, but shit is it quaffable.

500 ml. bottle. It pours a very pale yellow color with a thin white head. Kind of cloudy. The aroma is kind of farty/funky with some nice pineapple and lemon acid. There’s some grainy wort in the background. The flavor is very soft and mildly tart with some light orange, citrus peel, a little bretty funk, pineapple, leather and subtle oak in the finish. Mild vanilla coming from the oak. The vanilla, pineapple and citric tartness/bitterness all meld really nicely in this one. Light bodied, but a full creamy mouthfeel. This was a fun beer.

This one poured a flat apple juice color with basically no head. Aroma was of white ine, light cheese, lemon peel, grass, and apples. Flavor was very tasty apple and cheese, with some vineous character and some oak. Really tasty stuff but lacking cabonation and appearance.

500ml bottle split 2 ways. Pours a very pale yellow with a small white head that fades to nothing quickly. Aroma is chardonnay, oak, grainy bread, and lemon/citrus. Taste follows with the white wine, oak, lemon-pepper. Would have liked a bit more carb and a more dry finish, but otherwise a stellar beer that I would gladly crush all day long.

Really glad I got a chance to try this. One of the most unique saison’s I’ve had and one that really stands out in my memory now. You definitely get the wine barrel, chardonnay, grape in the aroma. Peach and grape fruit flavors. Finish is sticky resin a little band aid and wild yeast. Nice body and lemon flavors as typical of a bigger saison. Crisp and refreshing with nice deep flavors.
