Danish: Overall IIPA med mælkesyrebakterier.
Dette er et eksperiment, der nærmest har taget over hånd. Ov-ral- er To Øl/Mikkeller collab øllen, Overall IIPA, bare i en wild yeast version. Resultatet er en hyper kompleks øl med et ordentligt skud humle, som bliver balanceret af gærens syrlige og funky noter. I sandhed en ener.

English: This beer is one of a kind. It is our good "old" To Øl/Mikkeller collab - Overall IIPA - fermented with wild yeast. The result is a dry hop bomb that has been balanced by the tart and funky wild yeast notes.
When we added the wild yeast the fermentation went out of control and made a 100% attenuation - leaving no left over sugar in the beer.

CBC. Clear golden with a white head. Aroma is sweet, malty, caramel, brett and moderate hoppy - citrus and peach. Flavor is quite sweet, moderate acidic and rather bitter. Dry, light acidic and rather bitter finish. 110512

UPDATED: JUN 19, 2012 Draught at CBC. Hazy orange with a small white head. Aroma is a hoppy fruitbowl of citrus, grapefruit, peach, pine and soft bretty notes. Taste is quite dry, light brett, citric and bitter. Lingering fruity and ultra dry finish. Sophisticated.

On tap @ Copenhagen Beer Celebration. Clear golden body, small white head. Aroma is fresh straw-like hops, herbs and brett hints. Some pine and salmiac. Fresh and nice. Taste is bitter herbal notes, pine and brushes. Some bretty tones. Hints of wood and nutty syrup in the back. Dry mouthfeel. The lactic bacteria touches are very faint, but noticeable. A nice and original DIPA.

On tap at CBC. Pours hazy golden with a medium off white head. The aroma is hops, peaches, brett, caramel and passion fruit. Highly fruity, The flavour is dry and bretty with lots of fruity and caramel notes to balance it. Great.

Bottle. Pours amber with a white head. Lots of hop aroma when poured, later there is a lot of alcohol and some funk. Sour lemony taste with much alcohol. Thick mouthfeel. Im usualy a huge fan of US hoppy belgians but this is too much, of all.

[5/11/12] Draught sample at Copenhagen Beer Celebration. Clear deep golden-amber. Aroma of floral and fruity hops and a bit of funky notes. Flavor of fruity, slightly citric hops and some brett. Pretty dry with sourish notes and a lingering bitter finish. Medium-bodied.
