Danish: Overall IIPA med mælkesyrebakterier.
Dette er et eksperiment, der nærmest har taget over hånd. Ov-ral- er To Øl/Mikkeller collab øllen, Overall IIPA, bare i en wild yeast version. Resultatet er en hyper kompleks øl med et ordentligt skud humle, som bliver balanceret af gærens syrlige og funky noter. I sandhed en ener.

English: This beer is one of a kind. It is our good "old" To Øl/Mikkeller collab - Overall IIPA - fermented with wild yeast. The result is a dry hop bomb that has been balanced by the tart and funky wild yeast notes.
When we added the wild yeast the fermentation went out of control and made a 100% attenuation - leaving no left over sugar in the beer.

12oz at Markus'. Aroma is raison hops. Taste flavorful floral and slight spicy hops. Finish is medium floral hop. Mouthfeel is medium heaviest for an ipa.

Palme (3605) - Bergen, NORWAY - SEP 2, 2013
0.33l bottle. This is a crystal clear one, orange-ish in color and it has a nice big lasting head. Fantastic fruity aroma that literally fills the room. Some berries and sourned lime/citrus fruits, sweet caramel and it just smells fresh. The taste is also really something. Boozy, acidic/sour bitter hoppy, fruity, currants and a good amount of alcohol. It’s about average on the carbonation and slick to oily in the mouth. Resinous hops, almost bubblegum candy with a near apply-banana sweetness balanced out with a soft lime- or grapefruit-acidity. Light dry and tart finish. A creation. Tasty! 11.08.2012

Tap at Brasserie V. Unfiltered orange-brown. Big steady beige head. Pronounced funky dry sour aroma. Same thing for the taste. In some ways the background is a big Barleywine, but the wild yeasts really took hold. Sort of like a Double Orval. There are some odd infected tones under the desired sour qualities at times. Brutal, not really that subtle or perfected. It isn’t so thick, but has a rich oily burnt malt/hop taste in the background. Dry passionfruit tones, not so citric. Barky, woody almost. Dried out Brett Barleywine. Interesting. Unruly, unrefined, truly wild.

Tap @ fairbar, 15 / 6 2013. Cloudy dark orange, small white head, not much lacing. Aroma, delicious hoppyness of citrus, pine, grapefruit, with a very funky wild yeast mix, like passion fruit, you do sense some malt. Taste, sweet malty, hoppy, fruity, passion fruit, resin, . The wild yeast is some what hard to catch, would be perfect for a comparison with the normal. Ends with slightly dry, fruity, passion fruit hoppy note.

Poured from a bottle it is a murky orange with a white head strong aroma of citrus with bitter citrus overtones that linger on the palate on the sour side

From a 33 cl bottle shared at home. Pours a cloudy orange amber with an off white head. Funky tart nose. Flavor is a hop bomb, with citrus dominating. Very boozy finish. Intriguiging DIPA. Nice.

Pours orange with white head and no lacing. Aroma of floral and pine hops. Taste is the same with a light malty backbone, booze, and some cough syrup. Texture is syrupy. Excellent brew.

Bottle thanks to bhensonb. Poured orange with a fast fading white head. Aroma and flavor were both lots of citrus, passion fruits, slight caramel, and wild yeast. Absolutely wonderful tasting.

Draft at northdown. Pretty weak one here, lots of caramal maltiness, not a huge bitterness or brett presence. Funny how that goes with an overattenuated beer.

Bottle at the Bayou. Pours a cloudy copper color with a large white head. A big brett nose with tropical fruit. The flavor is an interesting mix between sour and more funky wild yeast flavors and big fruity hop flavor. Very good, a true mix of IIPA and wild yeasts. Drinkable.
