Danish: Overall IIPA med mælkesyrebakterier.
Dette er et eksperiment, der nærmest har taget over hånd. Ov-ral- er To Øl/Mikkeller collab øllen, Overall IIPA, bare i en wild yeast version. Resultatet er en hyper kompleks øl med et ordentligt skud humle, som bliver balanceret af gærens syrlige og funky noter. I sandhed en ener.

English: This beer is one of a kind. It is our good "old" To Øl/Mikkeller collab - Overall IIPA - fermented with wild yeast. The result is a dry hop bomb that has been balanced by the tart and funky wild yeast notes.
When we added the wild yeast the fermentation went out of control and made a 100% attenuation - leaving no left over sugar in the beer.

On keg at the Independent Manchester Beer Convention. Pours a golden colour with a decent white head. A great aroma of musty Brett, pine and pineapple hop notes and caramel malt. Similar flavours with moderate carbonation and a foamy mouth-feel. Lovely.

Pours a darker amber color with an off-white head. Aroma is floral and pine hops with some alcohol. Flavor is similar with some warning o.k. the finish.

Smell: funky citrus, orange, yeasty dough, honey. Taste: boozy bite, astringent, caramel, thick. Finish: tart, acidic, yeasty, orange skin, high alcohol bite. Too much alcohol and the flavors don’t seem to be well integrated. (tasted 04/14/16, BB 09/07/16)

Bottle. Aroma of caramel cherries. Look of cloudy red and orange body with nice head. Flavor is tart cherries, hops, citrus caramel and a touch of sweetness. Dry mouthfeel and the wild yeast makes this a little different each time I drink it.

Âmbar alaranjado escuro, leve turbidez, espuma amarela de boa formação e persistência. Aroma de caramelo, álcool,frutas maduras e adocicadas, leve amadeirado e resinal, fermento, várias nuances. Paladar de médio dulçor, leve amargor, álcool presente mas bem inserido. Corpo médio/licoroso, baixa carbonatação.o Final trás mais do resinal, caramelo, álcool, bem balanceada. Considerando o estilo, fica difícil sugerir qualquer melhora. Ótima.

Où, Quand, Comment : Bouteille, dégustée le 8/1/2013.
Visuel : Couleur : orangée. Apparence : voilée.
Arôme : Levures fruitées (agrumes) aux notes sauvages, houblon herbeux, floral, et légèrement citrique, malt sucré.
Goût : Entrée de bouche : Goût de levures fruitées légèrement acide (citron, notes d’abricots), sauvages, et légèrement épicées. Une dominante de houblon herbeux, floral et aux notes citriques et fruitées procure une moyenne amertume et est appuyé par un goût de malt sucré ainsi que des notes de pain et d’alcool.
En bouche : Corps : moyen. Effervescence : moyenne. Texture : légèrement crémeuse. Finale : moyenne-longue et aux notes sèches, composée d’une moyenne amertume de houblon floral avec un léger goût de levures fruitées.

Amber with a lazing white head. The aroma has notes of alcohol, brett, caramel, and malt. The flavor is quite sweet with notes of brett, caramel, alcohol, and malt, leading to a dry, tart, bretty, and alcoholic finish.

2016/01/04 - Pours a hazy, copper colour with a thick, rocky, off white head that slowly reduces and leaves moderate lacing. Aroma is heavy caramel, dough, citrus, pine, earthy hops. Taste is moderately sweet and moderately bitter; sweet caramel, honey, bready notes, mild pine and citrus and earthy, mildly spicy hops. Maybe the slightest hint of funk? Very caramel centric. Mouthfeel is medium and sticky with smooth carbonation and a long, moderately drying, bittersweet finish. Overall, a very nice DIPA, but the sweet caramel hides any funky notes that were present. ---Rated via Beer Buddy for iPhone

Aroma is excellent with a heady blend of caramel, toffee, hops, brett, fruit. But isn’t nearly so good. All the above qualities clash and the beer becomes almost undrinkable.

Sensoric. Deep amber, reddish with medium, semi-densed, white head. Medicore head retention and lacing. At first heavy caramel aroma, soapy, in the background nice funky notes. Taste is medium to high bitter with strong malty sweetness. The malty sweetness totally cover the funky brett sourness. Medium to full body, sticky and oily texture, finish is slightly bitter with malty notes (caramel). In general heavy, moderately hoppy and dominated by caramel IIPA.
