Sounded very promising, but for me a bit out of balance. The alcohol, allthough only 7% is a bit too strong, and the bitterness could be a bit more balanced with a nice malty touch, maybe some more wheat.. The hops are clearly on the backgroudn as bittering, and the aroma’s of the hops are a bit pushed away by the brett. Very nice brew, but my expectations for TO Ol are always very high! :)

330 ml bottle
Slightly haz orange to peach colored beer with big bubbled cloudy white head leaving lacing. Aroma has pine, caramel, resin, orange and some brett kind of yeastiness. Also some weird spiciness I cannot put my finger on, maybe white pepper and mint?. Flavor is bitter and dry with grapefruit, orange peel and caramel. Palate is medium full with heavy carbonation and some bitterness. Finish has strong bitterness. Aftertaste has lactic acid, grapefruit, orange peel and some brett. I would have wished there was some more saisony elements, now it’s more like a brett IPA.

Bottle. Pretty, golden, hazy. Smallish white top with nice retention and lacing. Nose: sourish and lactic, sharp farmhouse notes. Tastes sourish and fruity sweet, also lactic. Dry on the palate, wheaty-grainy mouthfeel, body medium, carbonation active, sharp acidic finish. No sign of the ABV.

Draught at Mikropolis. High creamy lasting white head. Hazy amber body. Mild sweet peach aroma. Mild dusty straw flavor with a low carbonation. Alcohol well hiden. Long finish.

Keg @ Victorian Craft Beer Cafe, Halifax. Cloudy deep amber-orange with a thin head. Hopped, very fruity with a touch of sourness but mostly tropical with a slightly stewed character.

Keg at Halifax Victorian Craft Beer Cafe. Sheer brillance, best keg beer ever. Bananas, ground dates mouthfeel, fruity smoothness. Slight bitterness on end, hidden abv. Drink it when you see it.

Orange light hazy, frothy white head, good lacings. Aromas of barnyard, orange marmelade; dried/dusty grains, wood and hay/moss develop. Somewhat effervescent, mild texture, medium body. A light sweetness is supporting the well balanced brett induced tartness. Somewhat dry, lightly slick medium lasting finish; hides its abv well!

Tap. Hazy deep golden with one finger head. Nice Brett aroma. Not as much Brett comes through in the flavor. Faintly tart. Lemon and funkiness with light hops.

Bottle. Nose is bretty leather with a hint of lemon but quickly mellows out to soft funk, strawberry and peach, floral. Taste is bone dry, spice, pepper, hint of lemon, emerging soft fruits, yeast, straw.
It’s a very nice Saison and pleasingly dry but not quite as nice as the exceptional nose suggested.

C’est très joli ce nez pointu .... Les brettanomyces sont discrètes mais amènent sans doute cette pointe de complexité qui dsitingue cette bière florale au houblon pointu ... Agréable et pas très "sour". J’aurais pas lu, j’aurais dit IPA sans penser au delà. A déguster à nouveau !
