COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

Bottle. Hazy red colour with a weak, off white head. Aroma has a fruity and wine-like base coupled with some alcohol and a little caramel-ish malts. Some plums as well. The whole deal is finished off nicely by fresh hops. Taste is very sweet with berries and wine, coupled with the sweet malt. A little fresh mint and spices can are traceable as well. Also a tiny bit of smoke and faint roast, providing a modest bitterness. Some faint, dry hops in the finish as well. Low carbonation, medium-big body, medium-long duration.

UPDATED: SEP 11, 2010 very malty, smokey, and slicker than snot on a glass eye!!! this is a great beer. one of the best of this style, i highly recomend it. it’s a little pricey for the tiny bottle, but totally worth it.

Lovely mahogany colour with a big frothy head and lace. The beer look fantastic. Rich malt aroma with pleasant fruit hints. Delicious full bodied malt flavour. Rich fruity, roasted texture. Bitter yet keeps a lovely rich smooth finish. Quality beer.

Pours a deep mohogany with red tint. Head is full beige but was fleeting. Massive aroma of fig, prune and date. Chocolate as well. Very nice, rich nose. Mouthfeel is medium with slight slickness. Chocolate with some malty sweetness. Like a winter warmer. I would pair this with a molten lava chocolate cake.

A: pours a deep rich mahogany color with a nice tan colored head on top. good retention rate, with a moderate amount of lacing. S: huge malty nose. some nice red licorice notes, hints of clove and a light banana tone. some earthy notes...almost oak-like. T: wonderful flavors. this is what a wee heavy should taste like. robust malts supply the major caramel notes to this. light hints of licorice, clove, and some light banana flavors. small notes of pipe tobacco also come into play. M: relatively smooth, especially for the higher ABV. medium bodied. solid carbonation level. great palate.

330 ml bottle from Premier Wine & Spirits (Halifax). Pours a chesnut brown with small tan head. Lightly roasty aroma of raisin, toffee and yeast. Taste is mildly roasty with toffee, yeast, a hint of chocolate. Prominent, somewhat dry bitterness in finish. Quite good.
