COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

30cl bottle from Waitrose, Edinburgh. Deep copper colour with a thin white head that rapidly fades to a ring; rich malty aroma with lots of winter fruits, prunes and raisins; more thinly bodies than I expected, smooth and buttery with toasted malts and light fruit flavours - cherry and plum; the finish is earthy, peaty and slightly smoky, and hides the alcohol very well. A pleasant ale, but I was expecting more.

Wiseblood (700) - Clarksville, Tennessee, USA - AUG 28, 2009
Reddish brown with little to no head. Big toasty sweet malts with a slight molasses aroma. Flavors were a complex blend of caramel malts, rich dark fruit and a little peatiness. Subdued bitter alcoholic finish-almost like wine.

Boozy plum aroma with a nice pastry quality soon followed by a woody tobacco scent. Opaque, rich brown colored body. A bubbly and filmy tan head with spots of lacing. Medium bodied brew, chewy and smooth with a malty sweet finish. Roasted, sweet and nutty malts with a touch of smoke. Lots of dark fruit flavors with a pleasant earthy aftertaste. Very good ale.

Bottle. Pours dark copper with a little off-white head. Light aroma of malt, toffee and dark fruit. Quite dry mouthfeel, a bit thin and watery with a little bitterness on the finish. I found the flavour to be also a bit on the mild side, maybe I drank it too cold but there were noticeable malts, a little peatiness and hints of sultana. Also there was a bit of metal in both the nose and the taste. Drinkable but not as good as the jacobite ale.

Bottle pours a dark ruby with a thin off white head. Aroma is malty, dark fruit. Flavor is slightly sweet, light smoke, dark fruits, and a little tartness.

12oz bottle. red tinted brown pour with small off-white head. aroma of dried fruits (plums) and spices. noticed the oak and smokiness up front in the taste. also get the dark fruits (this time more raisin) and finishes into a slightly tart hop bitterness. everything seems to mix well together. syrupy texture with faint carbonation. overall interesting and tasty.

A nice Scottish ale which pours with a lovely dark red colour, but also with a smallish, short-lived head. Aroma was quite malty, in a not-unpleasant way. Taste was better than most other Scottish ales I’ve had.

I like this more than most Scottish Ales. Big caramel, fruity flavor with enough bitterness to keep it from being cloying. The malt is rich and full. Pleasing finish.
