COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

UPDATED: JUN 29, 2009 Iced tea brown, off-white head. A little wet smelling, prunes, brown sugar, some yeast. Malty with a slight meat flavor, which reflects the interesting aroma. Quite lightly carbonated, and a lingering mildly bitter finish. Interesting and decent brew.

A dark brown brew with no fuss (head). Smells like sweet malt, sugar, and alcohol, which isn’t necesarily a good thing. The flavor is like mild beef, alcohol, and tinged barley leaf. It’s decent. It’s a little sticky in the mouth.

Dark brown with medium off white head leaving laces. Aroma has roasted malt, ripe fruits and liquerice. Flavor is moderate sweet with roasted malt, caramel, spices and ripe fruits.

Dark brown with a descent head. The aroma is weird, and the association I get is a dirty, wet dog! The mouthfeel is semi-oily. The flavour is complex, the notes are earthy, basement, wet, dirty dog, raisins soaked in rum and port wine, myrtle, oak and tannic acid. A very "alternative" beer that is a challenge to the taste buds.

Bottle from Utobeer. Pours mahogany / reddish colour with thin beige head. Aroma is of liquorice, malts, dark fruits, plum. Taste is caramel, coffee, chocolate, fruits, some alcohol, roast malts too. Overall this is very much like a Belgian style beer. Very nice beer indeed.

Buttery malt aroma with liquorice and waxy dark fruit. Dark ruby pour ringed with beige. Unspicy but still very Belgian-tasting, developing more liquorice, chocolate and raisiny fruit in the mouth, with a peaty smoked malt note and some alcohol glow. Tasty, complex, smooth, and falling somewhere between a pruney, malty dubbel and a silky Trappist heavyweight (Rochefort?). Nice.

Tasted 2007-12-27. Fresh bottle. Pours clear red/brown with light brown head. Sweet malty aroma of dark, ripe fruits and prunes. Flavours of prunes, sweet fruits, yeast and chocolate. Very tasty and very complex.

A big complex brew, packed with malt and spicy/floral hops. Not as sweet as I’d expected for a beer of this abv, but a well balanced satisfying ale. Amber in colour, palate is dominated by roast malt and rich friut, finish lingers well. A cracker!
