COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

35cl bottle courtesy of and shared with Kermis. Ok off white head. Caramel taste. Clear deep burgundy pour. Nice brew.

330 ml bottle from Birsciop. Dark copper/brown, hard to see through, with a small, bubbly and persistent light beige head. Poweful and intense nose, grapey and winey, burnt caramel and dark fruits reminiscence almost like a BSA, quite nutty and slightly boozy in the background. Oaky and almost woody taste upfront, mildly astringent and slightly tannic, not exactly easy to drink as there is pretty much no fizz whatsoever. Moderate warming sensation, herbal and almost medicinal aftertaste. Flat to soft carbonation, medium body, oily texture. Maybe itís an unlucky bottle, maybe I just donít like scotch ales.

Bottle at Oak Barrel, Helsinki-V airport. Pours dark brown with a little head. The aroma features creamy fudge, vanilla, oak and caramel, gives an aged impression. Taste is medium to heavy sweet, very malty. Caramel, vanilla, bread and some dark fruitiness appear. The palate is medium bodied, fairly flat, a bit sticky. Nice flavours, could perhaps use a fuller body.

Il colore Ť bruno, quasi di corteccia, invitante e sontuoso, con riflessi rubino; la schiuma si presenta fine, ocra e persistente. Al naso si percepiscono nettamente note di miele di castagno, caramello, frutta secca e fave di cacao a cui fa capolino, col passare del tempo, una nota legnosa e di rabarbaro. Líaroma Ť ben strutturato, elegante ed invita a una degustazione puntuale e rilassata. In bocca il corpo Ť medio e la carbonazione lieve, al gusto si distinguono nettamente note di cola, fave di cacao e frutta secca, contrappuntata da una leggera aciditŗ abbastanza tipica in queste birre dai sapori tostati. Il finale Ť rotondo ed offre una bella sensazione di persistenza caratterizzata da cacao amaro e liquirizia accompagnata da una piacevole sensazione di warming che rivela il grado alcolico (7.2%).

Bottle from Saveur-Biere.com - Color: clear dar brown beer with no carbonation and small white foam. Smell: roasted malt and chocolate domination. Small grapes finish and small sour notes. Very great nose ! Taste: nice roasted malt well balanced with sour finish and raisin. Notes of plums. Small chocolate finish. Aftertaste: bitterness and caramel.

Poured into a perfect pint. 3.25 A: Dark amber brown that is constantly changing color based on the amount and angles of light. One and a half fingers of frothy beige head. Retention is a bit below average and not much lacing is left. 4.75 S: The nose on this is incredible. I just had the Jacobite Ale not long ago and I can now smell what was under all that coriander. Powerful, yet supple peat and mineral. Molasses, caramel, and brown sugar. Oaken woodiness. Earthy and outdoorsy. Doesnít have the big, bold aromas of a lot of American brews, but it has the sophistication and integration of the Trappist brews. Really well done. 3.75 T: The taste is very good, but itís only a tenth of pleasurable as the smell. Still, itís a tasty brew. Peat and mineral. Oak and earthiness. Caramel, molasses, and brown sugar. It comes together well, but just not as well as the nose. Iím picking up a big more tannic astringency than Iíd like as well. 3.5 M: Medium body. Good moderate carbonation. A bit of tannic astringency on finish. This could benefit from some more creaminess. 3.75 D: Overall itís a pretty damn good brew. I didnít pick up any astringency in the Jacobite, so maybe this is just how this batch turned out.

Brown to dark brown colour, minimal head. Aroma is malty, with some caramel. Same in the taste, nice full body, sweetish, low bitterness, nice ale.

Bottle from Favourite Beer Cheltenham. Deep almost black colour with a tan head. Dried and spiced fruit aroma with a dark toffe sweetness. Taste also has the sweetness, with more dried fruit.

Bottle from a trade. Thanks minutemat! Dark brown, beige foam. Medium carbonation. Sweet with notes of cocoa, dark chocolate, caramel. Rather dry bitter finish. Well balanced. Good!
