COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

Local store had this one, surprisingly, and thank Bacchus they did. Wow, a strong, full-flavored Scotch Ale. Warming with a long, full finish. Can’t wait to try the Jacobite Ale they make. A bit pricey for the size bottle, but worth it all the same.

Very malty, sweet aroma, but more mild malty taste with a hint of caramel. Very complex, almost wine-like flavor. Nice carbonation, and dry finish.

UPDATED: APR 6, 2004 Malt! Yeah it’s sweet but not cloying. The sweetness seems to be balanced out by the alcohol’s dryness and a mild nutty flavor. Just a great beer in this style but at the money it cost it will remain a rare treat

Amazing beer. Pours DARK amber with medium tan head. Aroma is malty, a little fruit (plums?) with toffee/caramel. Flavor is moderately sweet. Very complex flavor. Chocolate, caramel, maple. I'm not sure what else, but it is good! Little hop flavor. The alcohol does the job to balance the malt. A slight astrigent/alcohol aftertaste. A very good beer!

Pours a transparent mahogany brown with a beige head and smooth slippery lace. Head retention is low. Aroma is of malt, caramel, and dark fruits with an earthy/roasty, yet astringent background. Taste is of malt, molasses and caramel with an astringent hop finish. Palate is light to medium bodied with a smooth start and a tart biting roasty finish. Notes: Lighter bodied than I expected. Smoothes and mellows as it warms.

Heck of a beer! Makes me proud to be Scottish. Pours a clear and looks like ice tea out of the bottle. Orange brown with a creamy, off-white head leaving quite fine lacework. Lovely aroma of sherry and overripe fruit. Full-bodied with a very soft and smooth mouth feel. Very complex flavor pattern with woody, mild oak accents and vanilla, caramel, sherry, plenty of fruit and even some vitamin accents and a nice smooth grain finish. The finish is dry. Very complex and pleasant Amazing.

12oz brown bottle from Ron’s. Dark brown body with ruby red highlights and a quarter inch of off-white head. Toasty nutty aroma on this one. Tastes like nut, caramel malt, with roasty and burnt malt, with hints of chocolate. Full flavored and complex. Creamy mouthfeel with just enough carbonation to support it. Fairly drinkable for the full-bodiednesss and abv. Fantastic.

11.2 oz bottle from the Four Firkins. Dark brown pour with a small white head. Fruity, oaky aroma. Nice chewy mouthfeel with a sweet flavor. Dark fruit notes in the flavor with a bit of oak coming through. Sweet, smooth finish with the fruit lingering on your tongue.
