COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

11.2 oz bottle to a pint glass. Pours dark chocolate with very small off white head, really almost none at all. I get chocolate, coffee, slightly bread malt. Very smooth and sweet, no bitterness at all. I like it, a very pleasant surprise.

2011 vintage. Aroma is nice raisin dried fruits, figs nutty malts, some alcohol. Light caramel brown coloured pour with a thin tan head. Flavour is composed of woody, booze, dried fruit, jam, little tang, some sugars. Palate is light / medium body, little age, lowish carbonation. 7,3,7,3,14

1991 vintage. Aroma is woody, soy, jammy fruits. Flavour is more jammy and dried fruit. Boozy fruit cake. Better. 6,3,8,3,15

1985 vintage. Aroma holds more sherry note, little tart, nutty soy. Flavour is composed of jam, earthy wood, little musty wood. 6,3,7,3,13.

1977 vintage. More umami, soy. Rasisn and booze, tart berry, jammy fig. plum. Still some carbonation on this bottle.

0.33 l bottle from FIRMA BIER, bottled in august 2014 (one year old). Clear, dark red with a thin, frothy, slowly diminishing, tan head. Sweetish-malty aroma of raisins, blackcurrant, plums, molasses and licorice. Sweetish-malty taste of molasses, cane sugar, licorice, raisins and blackcurrant, followed by a short, slightly bitter, coffeish finish. Medium body, slightly oily mouthfeel, average carbonation. Quite tasty but also not that interesting. Decent brew without any surprises.

Excellent ale. Dark amber-brown with creamy tan head. Aroma of malts and molasses. Taste adds caramel, roasted dark malts and the oak left a smoky-woody aroma. Low bitter ending. Smooth and easy to drink.

~Sweet bready, aroma. Hard to pinpoint what I’m smelling. Oak, raisin,vanilla, coconut. ~Pours a dark amberish brown with small lasting creamy light tan head. ~Sweet flavor as well with some strong oak flavor and slight roast, earth hop character of wood and leaves. ~Medium bodied, medium co2, lingering bitter roastiness. ~Enjoyable beer, would love to enjoy with friends on a cool evening, but doesn’t particularly stand out to me.

33cl bottle Dark brown colour with a small thin tan head. Caramel, dates, raisins and toffee in the aroma. Soft carbonation and full body. Taste is medium sweet at front with bitter notes coming forward. Overall, a very good beer.

Light brown with a frothy average head. Aromas of caramel, liquorice, sherry, alcohol. Sweet, with a tart and bitter touch, and an alcoholic finish. Soft carbonation and watery to oily mouthfeel. A bit cloying.

2011 vintage @ Croydonia. Deep reddish amber with a modest head. Red apple and cocoa. Rich malty punch. Taste of tobacco Infused liquorice. Toast. Brown bread and cocoa. Still pretty hot! Oily and soft. Decent.

Vintage 2011. Pours clear golden brown with a bubbly khaki head. The nose has lightly toasted bread, ripe fruits, fig, leather. Medium sweet flavor with lots of leathery fruits, earth, toasted grains, faint ash and cocoa. Medium bodied with fine carbonation. Finishes with more toasty bread, faint metal, earth, toffee. Not bad. (3.6)

Vintage 1991. Pours clear light brown with a slight, bubbly white head. A fair bit of oxidation in the nose, some caramel, leather. Medium sweet flavor with a bit of tobacco, rich figs, bread, mellow alcohol. Medium bodied with fine carbonation. Lightly warming finish with lots more fig, date, bread. Certainly some age, but very nicely nuanced. (3.8)

Vintage 1985. Pours clear brown, darker than the previous vintages, with a bubbly tan head. Nice aroma with rich burnt crackers, bread, toffee, faint cocoa. Light to medium sweet flavor with a bit of burnt pine, slight metal, burnt toast, grain, toffee. Medium bodied with fine to average carbonation. Fairly bitter on the finish with more pine, earth, ashy cocoa, dried berry, so e beat-up leather. Pretty interesting. (3.6)

Vintage 1977, batch 6. Pours clear, light brown with a few bubbles for a head. Mellow aroma, suggestions of bread and caramel, grain. Light sweet flavor with some tangy berries, earthy bitterness, oily fruits, bitter grain, caramel. Medium bodied, chewy, with soft carbonation. Finishes with bready malts, more caramel, some toffee, light berry, grain. Not bad overall, especially given the age. (3.4)

Dark red-brown colour with a small beige light creamy head. Aromas of malts, bread, dried raisins, some caramelised nuts and fruity-herb notes develop. Lightly carbonated, slick texture with a full body. Fruity-malt sweetness up front with light woody notes to it and a light faint bitterness. Lasting finish. Pretty complex beer.
