The simplicity of Trillium’s grist of barley and wheat delivers a wonderfully complex, yet approachable, American farmhouse ale. Our house farmhouse yeast blend, along with American hops, drive a distinctive character in this rustic, unfiltered ale. Trillium expresses a beautiful nose of peppery spice, coupled with flavors of fermentation-derived fruit and more pepper. Firm bitterness and effervescent carbonation combine with a satisfyingly smooth mouthfeel from the wheat.

Bottle to glass. Pours a slightly hazy light orange burnt sienna color with an off white head. Has kind of a mild juicy fruit character with just a touch of saison funk. Not bad, but nothing compared to the other Trillium beers I’ve had.

Location: 750 ml bottle from the brewery, 8/14/15

Aroma: The aroma is spicy and peppery saison yeast with some underlying fruity notes
Appearance: It pours a hazy yellowish color with a bubbly white head and drippy lacing
Flavor: It tastes similar, spice forward, lots of yeast flavor, light, fruity hops playing second fiddle
Palate: The body is medium, its got a lively carbonation, and a mid-dry close
Overall Impression: This is a very solid saison. Not quite up to the level of their pale, but few beers are. Good, well-made, and fairly flavorful. That about sums it up.

Fresh bottle from the brewery. Slightly cloudy light gold yellow. Heavy lacing. Nose of wheat, light orange citrus, perfumy with belgian yeast esters. Some spice and pepper, and a dry minerality that seperates it from a lot of saisons, with a wheaty, bitter finish.

Bottle. Pours hazy yellow, medium white head, dissipates fairly quickly, some lacing. Aroma is hay, grassy, pepper, a touch of lemon. Flavor follows, dry and quite light bitter, lots of cut field and black pepper, with a backing of lemon. Lightish body. Solid saison.
