The simplicity of Trilliumís grist of barley and wheat delivers a wonderfully complex yet still approachable beer. The house blend of farmhouse yeasts and Columbus and US Goldings hops drive a distinctive character in this rustic, unfiltered ale. A beautiful nose of spice and pepper, coupled with flavors of fermentation-derived fruit and more pepper. Firm bitterness, nicely carbonated with a dry finish, but thereís also a wonderful smoothness in the mouthfeel from the wheat.

Giant foamy head. White orange appearance. Lots of carbonation. Spicy nose, lots of Belgian notes. Interesting...Not great. But pretty good.

Super bomber into a large Belgian. Great voluptuous head, cloud white, inch and a half, solid lacing all over. Pours a hazed sunflower orange. Cloudy with hay in the background. Aroma of spicy orange pepper. Sour Mellon, white grapes, hops. Taste of the same, dry grapes and wine, smooth tart finish with bitter melon prevalent. Sour green apples punch in, say hello, then peel their skin and leave it. Pepper is omitted throughout. Crab apple feel as well. Alright.

Bottle shared by hammerslammer - thanks again, Matt! Pours a hazed pale yellow gold with a medium foamy white head that laces the glass. Notes of grass, celery, herbs, straw, lemon, pale malts, and dry grains. Not much farmhouse funk to it. Light-bodied, with moderate carbonation and a bitter, earthy, floral mouthfeel. Good, but very straightforward in comparison to the others Iíve had from here. Not a bad thing, but donít expect any explosiveness here.

Pours a hazy yellow, med white head. Aroma is grain, light banana, clove, hay, lemon, yeast. Flavor is crisp clean malt, lemon, grain. Clean & classic saison.

When I think saison, I think this. They hit the style spot on. Slight funk from the farmhouse yeast, peppery, wheaty, bubbly carbonation, and some nice hop bitterness. Faded gold color with huge fluffy head. Solid.

A very hoppy saison. Very good, but mightíve been even better with a bit less bitterness. Funk aftertaste, mild tartness. Plenty of yeasty spice notes. Resin, spruce hops.

Sample at the brewery. Cloudy light golden pour with a massive off white frothy head. Aroma of barnyard funk, spices, and bread. Complex with a creamy mouthfeel. Nice slightly dry finish.

On tap at Lord Hobo. Cloudy yellow pour with a white head. Wheat and floral aromas. Florally notes with the creamy smooth wheat characteristics. Mild spices. Might not actually be a wheat beer, but thatís the best way I can describe the mouthfeel. Which is good by the way. Nice body.
