COMMERCIAL DESCRIPTION
The simplicity of Trillium’s grist of barley and wheat delivers a wonderfully complex, yet approachable, American farmhouse ale. Our house farmhouse yeast blend, along with American hops, drive a distinctive character in this rustic, unfiltered ale. Trillium expresses a beautiful nose of peppery spice, coupled with flavors of fermentation-derived fruit and more pepper. Firm bitterness and effervescent carbonation combine with a satisfyingly smooth mouthfeel from the wheat.
ABV: 6.4%
MALT: Pilsner, White Wheat, Flaked Wheat
HOPS: US Goldings, Columbus

Bottle thanks to Joe. Hazy golden beer with a nice offwhite head. Fruity yeasty aroma, citrus, barnyard notes, hay, bready notes, slightly spicy. Hoppy yeasty flavor, citrus, grass, barnyard notes, hay, fruity notes. Smooth and balanced but maybe with too much yeast.

750 mL bottle poured into a snifter. Originally reviewed 6/2/2014. Hazy pale yellow body. Nice white head with nice clingy foam. Never settles out. Lemon and kinda herbal aroma. Very yeasty. Light doughy malt. Immediate herbal hop flavor. Lemon hops second. Grassy in middle. Light doughy malts. Lingering bitterness. High carbonation. Bitter. Medium body. A little nondeScript, but it’s tasty.

Pours a hazy straw with heavy lacing and two finger head. Aroma of ester, banana up front. Wheat, Coriander. Delicious. Taste is mild sweetness up front with mild to moderate bitterness to finish it out. Medium to full bodied. Medium finish. This is a tasty take on a farmhouse with a bit of a hoppy edge to it. Good!

Soft lemon bread aroma. Hazy dirty yellow body with a bright white head. Mild bitter with bal nced with bread malt. Has a pepper sensation on the palate. Smooth and dry finish.

(Bouteille de la brasserie): Un liquide qui libère une bonne quantité d’esters dans une concotion, somme toute, assez simple et facile d’approche. Un peu trop machable pour être qualifiée de Saison selon moi mais une bière Belge agréable tout de même.

My Bottom Line:
Bubblegum, herbs and light fruit coalesce in this easygoing Belgian-style Ale.

Further Personal Perceptions:
-A sheet of foam covers the hazy pale blond.
-Drinkability is very high.
-Mouthfeel is lean and clean.
-The flavor profile is balanced.
-This is a nicely drinkable, simple brew for those moments where you don’t want to think too much.

UPDATED: MAR 15, 2016 750ml bottle from the brewery. Aroma: black pepper, lemon, banana, bubble gum, cereals. App: cloudy pale with small white head but good retention and good lacing. Taste and palate: light to medium body, light sweetness, silky, moderate carbonation, light bitter finish. Overall: a good saison proper to the style. Not huge fan of those farmhouse saison by the book though. Nose is quite peppery but in mouth it?s way less peppery. I must confess that I love the texture. Unfortunately the taste isn?t that great. Again, I prefer some saison variants from Hill Farmstead.

Bottle shared. Lightly hazy gold pour with thin lacy white head. Aroma is grainy, yeasty, nice peppery yeast notes, light fruitiness, quite hoppy, dry, grassy hop aromas. Taste is lightly bitter, spicy belgian yeast. Palate is med-light bodied with good carbonation, could be a bit drier I think but still quite nice.

From the 750 ml. bottle. Cloudy pale yellow pour under a moderate white head that fades some. Little lacing. Aroma has a Belgian yeasty and spicy start. A bit of toasted bread and a little apple or pear. Smooth medium body. Some sweetness mixed in with a light fruit and pepper spice character for a mild biter finish. Quite drinkable.
