Portrait: Une belle robe cuivrée avec une mousse blanche. Un nez bien épicé avec du girofle et autres épices de Noël. Une bouche où l’on retrouve ces épices de Noël mais aussi des fruits et malheureusement un alcool.

750 ml bottle from Redstone, Andover. Bottled 2/08/16... Really? I bought this three days ago... Dirty Amber color, thick fluffy bold white head on a vigorous pour. Aroma is mostly rye grain, caramel and old floral hops.

The flavor is rye heavy, toasted grain center finish come off slightly floral / earthy notes. Also has a spicy / peppery yeast finish. Mouthfeel still has a a nice carbonation level that gives a lively zip. Yeah, Belgian styles are not what this brewery does best but overall still pretty nice and drinkable.

Poured from bottle thanks Airforcehops dated 2/8/16 deep amber with nice lacing and a thin off white head. Aromas of rye caramel yeast citrus and hop. Taste is caramel malt yeast and floral notes.

750ml bottle shared by AirForceHops. Thanks, Chris! Bottled 02/08/16. Pours deep mahogany with a greyish off white head. Aroma is fruity sweet grass, rye spice. Flavor is mild caramel, rye spice, peppery yeast.

750ml bottle from brewery shared with the drain. Aroma: biscuit malt, caramel, grapefruits, and lots of rye and barley. App: cloudy red, small white head, good retention, good lacing. Taste and palate: medium body, resinous, oily, medium sweetness, light bitter finish. Overall: not that good. Way too sweet. Was way better at 4C. Now, I find it hard to drink. Will end up in the drain.

Sample at a NYC-tasting at jredmonds place. Deep amber/ mahogany beer with a nice beige head. Rye bread aroma, hops, citrus, perfume notes, grassy, some spices. Grassy rye bread flavor,citrus, hay, floral notes, some spices. A bit odd but a good beer.

Growler 1l. Pours mahogany with low off-white head. Good lacing. Aroma is of rye, caramel, malt. Taste is of rye, caramel, roasted malt. Palate: Full bodied. Soft carbonation. Overall: Not my style. Lots of rye (but in that case it does the trick).

Pours a clear copper with a small offwhite head that leaves good lacing. Nose is of toasted cereals, pepper and other spices. Taste is lightly fruity, lightly sweet, bready and spicy. Moderately bodied with a medium carbonation. OK overall but falls short for a Trillium.

Growler (1 L) at tasting. Thanks to JulienHuxley for this one! Slightly hazy bright amber-copper with a small bubbly white head leaving little lacing. Aroma is spicy and rye forward with caramel notes, perfume, grains and grass. Taste is grains forward with moderate rye spiciness, floral-perfume presence, caramel notes and grass. Mild bitterness. Medium body. Moderate carbonation. A bit oily. Rye spiciness finish. Moderately lasting aftertaste. It’s not bad for what it is but the rye takes too much place for my liking making this one too perfumy. Average drinkability. Alcohol is well hidden.
