COMMERCIAL DESCRIPTION
We got super fancy with our procedures in the brew house on this Saison. Brewed with the rare ‘chit’ malt, spelt, rye, raw wheat and barley; a noticeably high in protein mouth feel is apparent. Employing a double fermentation, we first used lactobacillus bacteria in a hot fermentation to dramatically lower the pH and create a refreshing sour note. After the hot fermentation, we boil the wort and move it into a fermenting vessel for the second ‘cool’ fermentation using Saison yeasts and wild Bretta. After fermentation we age the batches on apples to create a extraordinary and ground breaking beers. Please enjoy the playful levity of fruit as it dances elegantly with a refreshing acidity across your palate.

On tap at Old C's in Colorado Springs. Pours like pineapple juice with a trim white head. Smells and tastes of straw grain, tart applesauce, and faint cinnamon. Different.

Pour on tap at the brewery, pour is clear yellow with thin to no white head, aroma has notes of lemon juice, applesauce, grass, biscuit, some slight dms, hints of yeast, earth. Taste is biscuit, slight apple, touch of yeast, grain, dms, earth, slight lemon notes, finishing fairly dry, slightly sour.

Tap. Pours hazy gold with a small, fizzy white head, short retention with light lacing. Aroma is apple, Lactobacillus, straw and meal malt, spicy hops. Flavor is funky apple, malt, farmhouse, Lacto and Brett with a dry finish. Light body and carbonation.
