COMMERCIAL DESCRIPTION We got super fancy with our procedures in the brew house on this Saison. Brewed with the rare ‘chit’ malt, spelt, rye, raw wheat and barley; a noticeably high in protein mouth feel is apparent. Employing a double fermentation, we first used lactobacillus bacteria in a hot fermentation to dramatically lower the pH and create a refreshing sour note. After the hot fermentation, we boil the wort and move it into a fermenting vessel for the second ‘cool’ fermentation using Saison yeasts and wild Bretta. After fermentation we age the batches on apples to create a extraordinary and ground breaking beers. Please enjoy the playful levity of fruit as it dances elegantly with a refreshing acidity across your palate.
