The origins of this Saison go back to the 1800ís when saisons brewed in Wallonia were rugged, unrefined, and edgy. Going back to the original roots of Saison, we used a large amount of ancient spelt grain, vienna, and raw wheat. Another first for Colorado Springs, this beer was fermented in primary with wild Brettanomyces and lactobacillus, and a blend of two Saison yeasts to create a lightly sour, extremely aromatic, and spicy yeast profile. Being a íProvisionalí, this beer was both dry hopped, aged, and naturally carbonated for authenticity.

2010 bottle @ Arminís post-Scottís Summer Saison tasting. Gusher but it didnít appear so at first. Cloudy, yellowish orange appearance with a white head. Fairly spicy, nicely floral, tangy bretty, spicy pineapple/lemon, lightly earthy aroma. One of the best aromas of an incredible saison tasting night. Cinnamon spicy, fairly spicy, refreshing lemon spritzy, somewhat tangy/lightly sour, nutmeg spicy, a touch woody flavor. Bravo. Bravo. Bravo. One of the best Saisons Iíve ever had. Should have shared this with Scott and co. Funky, spicy, fruity, refreshing. Fuck yeah. I guess Iím rating way higher than anyone else, but sweet jesus, this is just about perfect right now.

In short: A rustic, dry, floral and spicy Saison. Excellent beer respectful of the style
How: Bottle 750ml, kind-of-waxed top (lazy waxing here). Not sure of exact age but consumed about two months after receiving the bottle from adnielsen, thanks a lot Aaron
The look: Cloudy blonde body topped by a medium white head
In long: Nose is very rustic/dusty attic, an intrinsic spiciness sensation akin to white pepper, lemon zest. Taste is sharp. Crisp malt backbone that seems an equal mix pale malts, crystal malts and wheat. Strong rustic yeast character. Spiciness of the minerals kinds (salt, white pepper, etc.). Dust. Lemon zest. A nice hopping that is part wild flowers and party dry grassy yellowed grass. Dry grassy bitterness. A kick-ass true Saison. A great true-to-the style Saison from Colorado, one the 50 states where people believe their pride and patriotism is above average compared to the rest of the country.

Bottle from the brewery. Massive white head on a hazy straw gold body. Very spicy aroma with the yeast Iíd expect but with sage perhaps. Similar body but brett thickness and a faint sour finish. Stellar.

Thoroughly enjoyed this bottle from the brewery. A little pricey, but well worth it. Shared the bottle with others, but after tasting it, I wish I hadnít. It was refreshing a light yet full of flavor, and it kept my interest from start to finish. Had just the right amounts of funk, barnyard, flowers, spices (white pepper mostly), lemon nips, sweetness and bitterness. Awesome saison.

From faaaaar away after popping the wax covered cap this one killed with itís hoppy horse blanket aroma. Funk and bubble gum. Foggy gold in the glass and no head of any impression. That oft visited sour apple orchard going overripe. Plastic bandaids. If all this sounds over-the-top the beer is too. A lambic style wild ale dressed in a saison bottle.Nothing wrong with that, I love this beer. Itís actually worth the 25 dollars I paid. Just not a saison.

750 mL 2010 bottle, thanks Aaron! Gusher bottle, but nice hazy yellowish pour with fluffy white head, aroma has notes of nice lemon, brett, nice funk and some nice floral, spice notes, touch of vanilla, milky notes but nice with yeast. Taste is lemon, nice vanilla, biscuit, floral, tropical fruits, hint of pine and slight lactic acid but very small, finishing nice and fruity and tart. Balanced, tasty, delicious.

Nose is huge, tons of cinnamon, clove, etc. Taste is mildly funky, a hint of sour. Itís an amazing wild-ish saison. This brewery is killing it!

750ml bottle. Pours a lightly hazed yellow with a 2 finger thick bubbly white head. Great nose of yeast, clove, cinnamon and coriander. Semi sweet on the palate with a light funk.

Bottle shared at Kramerís Campground Brewdown 2012. One of the memorable beers for me personally. Pours a bright cloudy yellow body with thick haze. Aroma is lemon, wheat, zest and funk. Mouthfeel is zippy with a super lemon flavor dominating over other flavors of spice, zest, wheat, funky, lemon candy and ginger. Awesome.

GABF 2009. Pours clear light yellow with an average, frothy white head, mostly lasting with good lacing. Aroma is heavy malt (cookie, hay, straw, cereal, meal), light hop (flowers, herbs, grass), heavy yeast (sweat, horse blanket, barnyard, cheese, earth, musty) with notes of grape, apple, pepper. Medium bodied, sticky texture, lively carbonation, and a chalky finish. Long duration, light sweetness, acidity, and bitterness. Brettanomyces character.
