The malt bill of this late 1800’s inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Hazy gold pour, limited head. Aroma belies the sour flavors, slightly herbal. Quite tart for a saison, but initially a bit too much so and not very interesting. I leave this one sitting for an hour or two; upon returning the carbonation is markedly low and the tartness remains but at room temperature it is reasonably enjoyable despite the lack of focus.

750 ml. bottle. Pours golden orange with a decent white head. Aroma of fruit, funk, spice, and floral. Taste is tart fruit, funk, lavender, citrus, spice, and funk. Thought a bit too much lavender. Pretty good.

375, capped and waxed. Pours a cloudy burnished medium amber with no head, lace, or legs. Oranges and lemons on the nose. Creamy medium flat body. Light caramel with oranges and lemons on the mid palate. Mild citric finish. Not much happening here, really.

750mL bottle at Uber Tavern. Clear gold color, no head. Melony acetic sour beer but not strong. A doable sour, especially for this acetic brewery. Its doable but not refined.

750ml. Straw filled barnyard nose with hints of funk and grains tossed in spice. Fairly medium bodied but thick with flavor. You can’t taste the pumpkin so much, but the lavender really comes through in the finish. A clever odd one that worked from Trinity...

Bottle at Uber, thanks to Eugene. Initial pours were clear gold, later pours were cloudy (as expected). A few bubbles, but no real head. Aroma: brett, spice (like ... lavender and rosemary), mineral, wheat. Taste: dry and tart. Palate: light body, soft carbonation, slick texture. Overall: The spices and tartness force you to take this one slow. Nice, though.

Bottle poured a milky yellow hue w/ a thin white head. Moderate milky bretty aroma. Initial flavor is a light sweet w/ a bold tart finish. Tastes are lemon, milk, Brett, and light spice. Medium bodied and creamy mouthfeel. ---Rated via Beer Buddy for iPhone

Bottle. Pours clear golden with almost no head at all. Aroma is quite sour with berries and wine barrels, as well as tart canned cherries. Full body with average carbonation. Flavour is tart with yeast, as well as a rather strange combo of berries, wood and juniper, with a herby finish.

Bomber from Wilbur’s. Appearance: 2 fingers white head, golden yellow color, cloudy. Aroma: tart furit: grapes, lemon, black pepper, the lavender is detectable, and the pumpkin is there, it is just hard to pick out. Palate: light body, liveely carbonation, refreshing, light bitter finish. Taste: fruity sweet, into a light tartness, some black pepper, a peach and lemon sweetness before the light bitterness finishes. Overall, likely one of the most complex beers I have ever had. So much going on, and done in a way that all the components get their time to shine. Great beer, super unique, highly recommend. New favorite from Trinity.

Tasted on 1/15/14 from a waxed and capped 750mL bottle purchased at Belmont Station. Pours very cloudy, bright orange with a thick white head that slowly recedes to a thick collar of lace. The nose is funky dry brett with some brad malt, floral lavender, cardamom, and some more standard baking spices. The flavor is the same very dry brett funk, orange peel, the pumpkin comes through on the nose, the same baking spices from the nose, and an added vanilla and coconut note, I’m assuming from barrel treatment. The body is medium with average, stinging carbonation and a long funky brett, bitter spice, and coconut barrel finish.
