The malt bill of this late 1800’s inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Cloudy pale yellow pour with a white head. Really nice lemon aroma. Quite tart with some pepper spiciness, nice floral qualities, grass, and some sweet bread. Nice funky flavor to this. The lavender is pretty well pronounced, lots of tart lemon, mild malt flavor, and some grass. Good peppery spice, some orange peel, and a dry finish.

12 oz. bottle, pours a cloudy golden yellow with a small white head. Nose brings out vinous notes, lots of lavender, and brett. Flavour is complex and cohesive, with lots of lavender upfront, followed by big funky brett notes and white wine barrels. Very spicy, bretty, and complex. Could use a bit more carbonation. Very good stuff.

750 ml bottle shared by BeerandBlues2 ( thanks Brad!) poured a cloudy gold with a lasting white head. Aromas of straw, barnyard funk, citrus, pumpkin, cardomom, pepper and light leather. Palate was light bodied and crisp with a dry finish. Flavors of straw, corinder, cardomom, pepper citrus, yeast and light barnyard funk with a crisp dry lingering funky spiced finish.

Bottle. Pours hazy pale orange with a medium, frothy white head, medium retention with good lacing. Aroma is lavender, black pepper, coriander, fruity esters, cardamom, oats, earthy hops and Brettanomyces. Flavor is malt forward with heavy spices, fruity esters, Brettanomyces, oat, rye, and wheat malt with a dry finish. Light body and moderate carbonation.

Light orange pour, fluffy white head. Aroma is tart and loaded with floral lavendar. Flavor is wonderufl. Yeasty, tart, lavendar, wheat, good acidic backbone, but so soft on the palate. Wow. Great brew!

GABF 2012. Jesus Christ, I think I drank a full bottle over the first two nights of GABF. I believe that I had about twenty pours and to be perfectly honest, I was chugging this shit near closing both nights. Maybe it’s just me, but Trinity’s Saison Provisional and this are simply world-class.

Pours a cloudy yellow orange appearance with a white head. Tons of funk, spices, light bretty pineapple, and a ton of lavender. The floral element is just beautiful in the flavor and the nose. Beyond the floral element which is pretty strong, is a soft bretty tartness, citrus, light rye, and moderate spiciness. Finishes a bit spicy, floral, and slightly tart. An absolute delight. Despite the high price, I fully intend on picking up a couple bottles for a special occasion. FUCK YEAH.
