The malt bill of this late 1800’s inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Bottle from the brewery. Kind of all over the place--not unexpected with an ingredient list like this--but it actually works. Gingerbread and pineapple tart and matcha; flowers and true cinnamon in the back. Flavor is a touch sloppy, but mostly dry, with the brett helping move things along. Fun stuff.

375ml bottle pours a murky orange color with a short lasting fizzy white head that leaves no lacing behind. Aroma is orange zest with some white wine barrel notes finishing with some funk. Taste is an orange zesty tartness with some spice from the grains and a light fruity and malty sweetness and funky yeast finish. Light to medium bodied with moderate carbonation. Overall, quite a complex brew for the style, but something seems to be missing for complete satisfaction, and I can’t quite place it.

Pours a fizzy honey golden with no head. The musty barnyard aroma leaps out at you as soon as the bottle is open. Some sweet citrus, hay, and oak, too. Full bodied with a sharp but restrained carbonation level. Flavor has the musty barnyard notes followed by sweet citrus, lavender, proseco, and floral. Tart throughout. Ends rather dry. Definitely beat my expectations.

Thanks to dhatton. Pours hazy deep gold with a small white head. Aroma is barnyard, hay, basement, citrus and oak. Taste is tart followed by sweetness. Medium bodied, smooth with a puckering finish. Very solid.

Bottle. Moderate to heavy bread and straw for the malt, moderate lemon and grass for the hops, heavy barnyard and faint basement for the yeast, with proseco, unripe peach, vinegar and wood in the background. Head is small, frothy, white with some slippery spots of lacing and is almost fully diminishing. Color is murky medium amber. Flavor starts slightly sweet and moderately acidic, and finishes the same. Palate is light to medium, slick with a lively carbonation. Excellent Saison with a touch of sweet fruitiness to balance the tart wildness.

12.7 oz bottle shared with drsordr. Pours a slightly hazy golden color with a small off white head. The aroma and flavor have pale malts, oak, Chardonnay character, noticeable Brett character, dry, mild funk, good fruit character with a hint of lavender. This has a nice combination of flavors with just a hint of tartness.

Bottle shared by alexsdad06 pour clear light gold with thin white head. Nose moderate funk, lemon, and some floral. Fairly pleasing nose for the style. Taste nice tart up front, then fruit and floral, lemon, kiwi, white wine, and sweeter. Minimal oak late. Fairly refreshing.

Bottle from Andersons in Dublin: hazy yellow, thin white. aroma of nice funk, floral, perfume. tastes are moderately tart - herbal, pepper spiced, woody, brett, lemon, floral and funky. moderate dry on the thin to medium palate. I know it’s based on a saison, but just a sour in my book. good at that.

12 oz. bottle, pours a cloudy golden yellow with a small white head. Nose brings out vinous notes, lots of lavender, and brett. Flavour is complex and cohesive, with lots of lavender upfront, followed by big funky brett notes and white wine barrels. Very spicy, bretty, and complex. Could use a bit more carbonation. Very good stuff.
