IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. I'm not a sour guy so I thought! This is fricken awesome. Cloudy / unfiltered / yummy / not too soury...Trinity Brewing goes to the top of my beer adventure list!

Appearance: cloudy orange, with a huge fluffy eggshell head that leaves a ton of lace. Aroma: hugely sour and tart nose, with tons of blood orange, grapefruit, mango, and peach, over a thick bed of plasticky funk. Taste: insanely sour up front, a little less so as it warms, with the tartness slightly offset by the nearly acidic brett funk; fruit is the main player, of course, with lots of grapefruit, mango, orange, even pineapple. Finish: long lasting, and very dry and bitter, with the sourt tartness of the fruit lingering over the brett funk. Notes: I like sour ales, and IPAs, and session beers, and fruit beers. Bottle pours cloudy orange with generous yellow head. Aroma of citrus and funk. Taste sour orange and tangerine with brett funk. Sour/tart finish. Full palate. I didn’t get get a lot of hops, at least not in the bittering sense, there was huge citrus taste which was very nice.

Orange with a white head. Aroma is orange, barnyard funk, tangerine, coriander. Light bodied, funky and fruity on the palate with a light tartness, very dry finish. Taste is tangerine, coriander, brett. Nice.

A session IPA that pours cloudy gold with a citrus/moldy nose. Medium body after a slight foamy white head. Distinctly tart of Lacto and Chardonnay barrel aging, and an underlying funk from Brettanomyces. A hybrid tasting sour/wild if you will. Really made me pucker at first, then mellowed out nicely into a refreshing beer. Defintely no hop bitterness to this IPA.

I’ve heard of coriander in Belgian ales, but coriander in an IPA was pleasant surprise. This from a person who usually does not like the Belgian style. I get a distinct taste of passion fruit underlying the citrus/sour flavor base. Each sip brings out more complexity. Not sure I could drink a lot of these in one sitting, but it definitely deserves a place as a starter.

Pours a hazy dark apricot with a fairly thick and fine-bubbled eggshell head. Fruity aroma is quite sour and has a yeasty hint. Flavor is quite sour, with a snip of hoppy bitterness - not make-your-face-do-aerobics sour, but pucker-worthy just the same. Texture is firm, smooth, and rather fizzy, leaving a nice sour apple finish. Swing on over and grab one!

750 ml bottle pours dark orange, thick and hazy. Aroma is big juicy orange and tangerine, taste is similar with a light Bret tart and fruity finish. very nice

375ml bottle pours out a hazy golden topped with a white head. Nose is apricot jam peaches and a nice tartness. Taste is as the nose apricot peach some hop notes and a very nice tartness. This was a very tasty brew.
