IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. Cloudy golden color, off-white head. Tart, light funky, mineral, green berries taste. Tart aftertaste. Fizzy mouthfeel, very low bitterness. Tart, funky, farmhouse scent.

Waxed bottle. Poured a cloudy golden color with an averaged sized head. Funky, fruity, wood, citrus, pine, and earthy. Interesting.

Cloudy brown with some reddish hue. Perfumy hops, tropical brett and hop aromas. Lightly tart, wet wood, pineapple, citrus/pine/tropical/floral hops. Very complex and balanced at the same time. Probably the best of Trinity’s standard beers by a long shot.

Pour on tap at Avery Sourfest 2014, hazy orange-red pour with white head, aroma brought nice notes of mango, tropical fruit, passion fruit into a bit of tart lemon, oak, funky notes into a bit of cheese, some bready, biscuity notes with a nice citrus component. Taste was a mix of funk, grapefruit, tart lemon, orange, hints of nice funky, zesty notes into passionfruit, mango, some slight lacto, finishing slightly bitter, tart. Very tasty.

Pours murky orange with a short lived white head. Aroma is full of funk, light fruit, must. Taste is delicious, starts off with a short bitter start, goes into funk a bit of grapefruit, tart strawberries,cheese,funk, bitter again and then a dry ,sour puckering finish. Would definitely buy again.

Thanks adnielsen for my 1st Trinity beer! Waxed bottle 12.7 oz. Murky golden/orangish glowing color, with little to no head. Mango, cheese, earthy, barnyard funky smell on the nose. Mouth puckering tartness on the tongue. Grapefruit flavors, slight bitterness, light mouthful, and dry finish. Excellent beer. Highly recommend to others!

Fruity sweet tropical hop aroma. Don't get any real sourness in the aroma. But has a Brett fruity ness to the aroma with a nice hop backing. Very different but nice. Taste adds some lactic sourness with a bit of a funky finish. Maybe 75/25 lactic to funky sour. 4 of 10 sour, not crazy pucker sour but a good amount. The taste is actually quite great the more I drink. The hops with the sourness gives it a very tropical/passion fruit , juicy feel and the sourness is in turn balanced by the malt and hops. Really nice. This is a different sour, but super complex and very enjoyable!! ---Rated via Beer Buddy for iPhone

Bottle. Pours hazy amber, large puffy off-white head, dissipates slowly wiht nice residual lacing. Aroma is mosaic, passionfruit, melon, guava, oak, lemon. Flavor is light sweet, and light plus tart. Not getting a ton of bitterness - certainly nohwere near the reported 100 IBU. Super fruity and tropical, citrus zest apparent along with tons of things that normally appear in fruity beach drinks stuck to a cocktail umbrella. Medium body, full mouthfeel. God I love dry hopped sour beers.

Bottle at home. Pours hazy orange yellow. Nose is tropical fruit and light funk. Tastes of mango, melon, pineapple, grapefruit, dry hops, grassy white wine, some tart sourness. Dry and fruity finish. Some lemony puckering.
