IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. Bottle 375ml. Thx Eric. Pours golden with low white head. Aroma is of citrus, sourness, fruits, oak, white wine. Taste is of sourness, citrus, some nuts, some lactic notes, oak, butter. Palate: Light body. Medium carbonation.A little tangy. Overall: Quite nice. Acidity under controll. Maybe nuts/butter just a tad too much. As stated in ratings by fellow ratebeerians: 100 IBU? No. The "method" doesn’t work :)

Bottle from the brewery. Pours opaque copper with floating particles and a thin, fizzy off white head. Tastes like lightly sour fruits, some tart pear, some tart apple, cracker malt, dry citrus hops. Light/medium body and low carbonation. Smells like yeast, tart apple, tart pear, citrus hops, and sour fruits.

Bottle shared by snoworsummer. Pours hazy reddish amber. Aroma is red berries, oak, floral notes, pale malts, faint vinegar, and faint toast. Flavor is smooth and tasty with some acidity, sweet red berries, toast, oak, and faint vanilla. Medium body.

bottle shared by minderbinder, thanks bro! pours light but bright golden with a small creamy white cap, reviving and leaving some lacing. funky citrus - tangerine, dill, not overwhelming buttery barrel, strawberry fruitiness, red grapes, spicy maltiness - rustic cereals; spices. light carbonation, light body - slightly watery; dry, gently tart and woodsy-spicy finish. complex flora, nice tangerine flavors, good use of french oak. good stuff.

caramel gold cloudy pour. Aroma lemons, lychee, acetic acid. Tastes briny, tart, minerals, cheese. mid sour. slight tomatoes grassy hops some doughiness. slight bitter nowhere near 100ibu. really well balanced. Palate is a bit odd syrupy and prickly.

hazy gold-orange, fizzy white cap dies quick, light effervescence at sides of the glass. Bright mango nose is balanced by must and light rind, a bit too sweet in gummy dullness. Ultra bright profile is more balanced, sour white grapefruit up front alongside cobweb and must, dry papery bitterness from the hops growing mid before sweeter fruit (mango, tangerine, some zest) and lactic acid dominate in thin, lightly jowl-tingling sour finish. A little too slick from the acid and band-aid hints growing mid with warmth, but ultra bright and supremely effervescent.

Golden orange pour with a thin white head .... Aroma of tangerine zest, citra grapefruit juice and mosaic lemony hops .... Taste is rindy and of lemon rinds, grapefruits, citra/orange, tangerine wow a fruit explosion. Kind of hard to these flavor are from hops ..... Tart tangy and dry finish with a lingering bitterness ..... Mouthfeel is oily ... Sour and tart brew. Definitely lives up to the billing

Pours gold with a huge white head. Aroma of funk, oak, citrus, pineapple and vinegar. Taste follows, loads of tropical fruit, bitter grapefruit and vinegar, finishes with dry white wine, oak and funk.

Cloudy golden color, off-white head. Tart, light funky, mineral, green berries taste. Tart aftertaste. Fizzy mouthfeel, very low bitterness. Tart, funky, farmhouse scent.
