IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. Bottle: The aroma consists of light-moderate citrus, lemon, and a hint of florals. It’s a hazy golden-orange with a small white head that quickly fades to a minimal film outlined by a thin ring. The flavor starts with light-moderate tart citrus. The finish has moderate sour lemon, light lemon peel, and a hint of florals. It’s light bodied with light-moderate carbonation.

12.7oz bottle to tulip. Pours tangerine orange, white soapy head, dissipates immediately. Aroma of ripe peach, mango, tangerine with a sour wine bite. Taste is BAM! right in the cheeks sour. Chardonnay, pear, tangerine, citrus peel. Not much for malts, reads more like a fruit wine cocktail. Finish is a bit hoppy, but not enough to justify anywhere near 100ibus. There is definitely a lot going on here, but sour just isn’t my thing.

Bottle shared by alexsdad06 pour hazy avg orange gold with moderate white head and lots of floaters. Nose sour and tart, light lemon, some bready. Taste gets you right in the salivary glands. Tart some cherry and lemon, then some reasonable hop bitter and grass. Reasonable beer but just not my thing.

Bottle. Aroma is super juicy with some fresh pulpy sourness and moderate brett. Leather, barnyard, ruby red grapefruit, tropical fruit, cherries, and oranges. Tastes very unique. A touch of juicy tropical and citrus up front but quickly turns dry, moderately sour, and a little bitter. Leather and grapefruit big time on the back end along with lime, salt, and coriander. Medium to full body. Really cool beer. Love the combo of sour fruit, brett, and hops. A must try beer.

1/2L red-waxed bottle from Whole Foods PM. Pours turbid golden orangy with minimal head and a lot of effervescence. Nose is very hoppy,bready, with yeasty funk, citrus, lemon. Tastes tart, with lemongrass, lactic tartness and funk, earthy, bready. Finishes tart, with lemon all around,grapefruit (ruby red), and a complex and smooth finish.

Thanks to errl for sharing this bottle. Hazy golden pour with a white head. The aroma is very hoppy. I get some big tangerine and mango notes. The flavor is similar with some light brett and light tartness accompanying the juicy tangerine character. Medium mouthfeel and medium carbonation.

Bottle. A cloudy amber color with a laced white head. A strong sour and tangerine that has some barrel aged hints. It’s hard to find the hops in the sea of everything else in the aroma.
