COMMERCIAL DESCRIPTION
IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. Bottle (375 ml). Thanks for kbudd19, thanks! Side-by-side with Easy Swinger and Double Swingline. Hazy golden/orange with a small white head and little lacing. Aroma is a burst of citrus along an important lactic presence, chardonnay notes, hops and brettanomyces. Taste is super citrusy and quite hoppy with lactic notes, chardonnay, brettanomyces, hints of coriander and light bitterness. Medium body. Soft carbonation. Oily mouthfeel. Moderately dry finish. Never tried anything like that, super citrusy and also super hoppy, but the citrus doesn’t come from the hops along the combination with chardonnay barrels. Really enticing aroma. Good drinkability. Complex and good balance considering all that is going on in there.

Bottle at Tom’s. Hazy gold - amber pour, no head. Aroma is really grapefruity, really intensely citrusy, lemony aromas, light white wine bretty aromas. Taste is hoppy, sour, very citrusy, tons of citrus peel, lactic. Quite unorthodox, it took a few sips to grow on me but this is actually really good beer.

Bottle from Concealer. Pours hazy golden with fluffy, white head that lasts. Smells of funk, citrus, and biscuit. Drinks with moderate sour bite with no lingering bitterness. Light bodied. Tastes of grapefruit, predominantly, with orange zest, wood notes, and funk. Dry finish with lingering grapefruit and floral notes.

Aroma is very fruit forward with a lot of pineapple and guava With some other tropical fruit. Light cherry pie notes with some light malt and faint oak notes. Pours a cloudy, pale golden orange with a thick, small white head with good retention. Moderate lacing and small legs. Flavor has some light malt notes with a hint of caramel character. Lots of tropical fruit noted, especially guava and pineapple. Moderate bitterness with quite a bit of tropical fruit juice. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty nice, Brett forward, tropical fruit IPA. Really juicy, tropical frit notes. Even with age the tropical fruit is there but there is not much hop character. Moderate acidity. BAD IPA, good beer. Aroma

Une bouteille bue avec moi-même pour mes 41 ans. Le liquide orangé peine à développer une tête résistante. Peu importe. Ses arômes me plaisent énormément. Bonbons surets, agrumes, épices, bretts et fruits du verger attaquent l’intérieur de mes narines de très belle facon. Au goût, les fruits sont sûres et les houblons comme une tempête tropicale. Miam! En bouche, un liquide qui fait oublier sa minceur pr son côté aromatique. Une finale merveilleusement fruitée et habilement sauvage et sûre. Du bon petit jus trop facile à boire.

Pomagrenade, pêche, ananas, pamplemousse dans une tempête acétique, citrique, juteuse et asséchante. Pas la buvabilité ultime considérant le taux d’alcool mais certainement agréable.

Bottle: Poured a cloudy orangey color ale with a medium size foamy head with OK retention and light lacing notes. Aroma of light citrus and clementine notes is quiet refreshing. Taste is also dominated by citrus notes with some clementine notes which are very refreshing and light tangy and tart finish. Body is quite full with medium carbonation. I just took this out of the fridge without knowing exactly what I was about to drink but very good beer even though sour side is not that apparent.

375mL bottle, pours a murky orange with a small white had. Nose brings quite a bit of murky feet funk, armpit, lacto and some hops in there. Flavour is sure unique, with loads of musty, BO-like brett funk which is somehow amazing, with grapefruit pith, dry hops, and more funk. Wow - this is sure innovative. Highly flavourful for only being 4.1% and hugely funky. Wonderful stuff.

Bottle split with friends. Light pink hazy pour. No real head. Aroma of grapefruit juice, grass, citrus zest. Taste is grapefruit, orange, bitter grassy hops nicely balanced with a bracing tartness. Great all around.
