IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. The largest thing I can say about this beer is its very surprising flavor! There is a bit of a wow factor when you take the first sip of liquid sour and hop. I would say it gets better the more you drink it. I quite enjoy it!

Bottle. Pours oramge with white head. Aroma is very fruity, Brett, a bit spicy, sweet fruits. Taste is very dry, lots of Brett, a bit of fruit. Overall, it’s really good.

Bottle at Jd’s bday bash a month or so ago. Thanks Ethan for sharing. This was one of the best beers of the night in my opinion. The hops worked very well with the funkiness. I didn’t take any notes, obviously. But it was delish. And worthy of a rating.

Thanks to Marty for this. Gorgeous intense sweet tropical sour nose. Smack the lups and dies a clean sweep of all tge relevant taste buds in the mouth. Lots of sap and,as the bottle says, zest. Those French Oak Chardonnay barrels and that 100 IBU count work some magic. Sufuckingperb.

Thanks to Ryan for this. Brett oak-aged session IPA - wtf? Pours murky, pale with offwhite head. Juicy, tropical brett galore - tangerine and grapefruit. Bitterness is minimal (100 ibu? really?). Slick texture, nice and dry. I have a hard time believing the 4.1%.

Bottle thanks to Rainer. Pours a cloudy orange with small frothy white head. The aroma is citrus, brett, floral, and funk. Medium mouthfeel with strong funk, light citrus, brett and lingering dryness. Good.

Bottle. OPaque, deep orange with a small off white head that lasts on the sides. Aromas of citrus, grapefruit, mango, tart fruit, oak and funk. Flavor is tart mango, citrus, oak, yeast, funk and light pine. Light bodied, moderately carbonated, dry end with lingering funk and oak. Sessionable.

Acidic citrus and funk nose. Flavor is minerality, light oak, nectarine, peach, lemon/grapefruit, peppery brett, pineapple, faint mango. Decent body for the minuscule abv. Really impressive and interesting, I’ve never had anything like this.

Bottle @ Hunahpu Day 2014. Pours cloudy orange-golden color with off white head. Aromas of citrus and vinegar. Bitter grapefruit and acetic sour flavors with some oak. Medium body with average carbonation.
