IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. Bottle. A cloudy amber color with a laced white head. A strong sour and tangerine that has some barrel aged hints. It’s hard to find the hops in the sea of everything else in the aroma.

Bottle at Torst. Chillhazy golden color. Really nice dusty and funky aroms of attic corners and barnyards. Taste is funky, dusty, peppery overripe tropical fruit. Very tasty.

Sample at Daily Growler Powell. Hazy orange-gold color with a medium white head that diminishes steadily to a film. Short strings of lacing on the glass. Aroma of funky brett, fruit and malt. Light-bodied with flavors of funky citrus, brett yeast, malt and oak. The finish is moderately sour with an oaky and fruity aftertaste. Solid beer all around.

From the big bottle with waxed cap into a Deschutes tulip glass. Ooooh, there’s the stapler guy from Office Space...stapler! Pours amber with head and lace. Aroma of light grains and tart fruit. Significant carbonation and mouthfeel. Flavors of tart fruit, grains, lime, kumquat, pink grapefruit, star fruit, light malts, slight hops. Overall tart but not overly so, complex, flavorful and fun!

Bottle purchased at corner shop across from Pony Bar HK. Pours a deep hazy orange body with no head or lacing. Mouthfeel is medium, somewhat juicy and tart with notes of tart citrus, vinegar, yogurt, fruit spritzer, bright acidity and wine barrel. A bit reminiscent of Jolly P/RR funk, but a bit too much vinegar and acidity overall.

Bottle 375ml. Thx Eric. Pours golden with low white head. Aroma is of citrus, sourness, fruits, oak, white wine. Taste is of sourness, citrus, some nuts, some lactic notes, oak, butter. Palate: Light body. Medium carbonation.A little tangy. Overall: Quite nice. Acidity under controll. Maybe nuts/butter just a tad too much. As stated in ratings by fellow ratebeerians: 100 IBU? No. The "method" doesn’t work :)

Bottle from the brewery. Pours opaque copper with floating particles and a thin, fizzy off white head. Tastes like lightly sour fruits, some tart pear, some tart apple, cracker malt, dry citrus hops. Light/medium body and low carbonation. Smells like yeast, tart apple, tart pear, citrus hops, and sour fruits.

bottle shared by minderbinder, thanks bro! pours light but bright golden with a small creamy white cap, reviving and leaving some lacing. funky citrus - tangerine, dill, not overwhelming buttery barrel, strawberry fruitiness, red grapes, spicy maltiness - rustic cereals; spices. light carbonation, light body - slightly watery; dry, gently tart and woodsy-spicy finish. complex flora, nice tangerine flavors, good use of french oak. good stuff.
