Fruit and honey aromas with an earthy yeastiness clearly evident. Complex flavor profile featured citrus fruits and a warmong alcohol feel. Some spice, pear and pepper are in the background, and all is gently offset by a hint of hops bitterness. Strong carbonation, medium mouthfeel, a very crisp and dry aftertaste. Flavor is never aggressive like so many tripels, and instead is sweet and a little dusty with orange, pepper, and a nice, soft malt. Pours a beautiful cloudy blonde with a two-finger white head that has great retention. Lasts and lasts. Aroma is at first citrus, flowers, floral hops, vanilla and maybe a hint of macro lager graininess. Taste is nicely carbonated and fizzy upfront with nicely balanced flavor of floral hops, coriander, whipped cream, white grapes, and Belgian yeast. Lots of candied fruits. Visited Bosteels Browerij on ’07 summer and must say everyone should get there and enjoy a bottle of Tripel Karmeliet and a Deus as we did with the Bosteels family while having a great conversation about beer, wine and food.
