COMMERCIAL DESCRIPTION
Scratch #14-2008 is our interpretation of a farmhouse ale—a once near-extinct winter-brewed (and summer–imbibed) Belgian ale. celebratory brew starts with a black pepper and ginger nose. The nicely carbonated brew releases a honey-malt flavor that gives way to a tart crisp finish that masks the elevated ABV. We use a blended yeast strain (Saison Dupont & Le Chouffe) to create the traditional peppery, spicy earthy flavors of the saison. Slight hints of ginger also come through in the finish. Drink it ‘til the wedding bells chime!

O.G.: 15.4 Plato
I.B.U.’s: 25
Malt: Pils, Munich, Vienna
Yeast: Belgian/Saison Blend
Juju: Ginger
Hops: English Pilgrim, Saaz

12oz. Bottle: Aroma of spices, yeast, pepper, cloves, and bubblegum. Poured yellow/gold in color with a small, fizzy, white head that disappeared immediately. Cloudy. Full of tiny and large particles. Very sparkling. Flavor is light to medium bitter. Tastes of pepper, cloves, yeast, slight ginger, slight lemon zest, and and grass. Medium body. Average texture. Average carbonation. Lemon, yeast, and pepper finish is slightly dry.

Pours a hazy golden yellow with a clingy-lacing froth of white head. Aroma of sweet biscuity pale malts with some clove and banana esters. Body starts with good fullness and sweet maltiness balanced with a lightly peppery spice and some doughy Belgian yeasty character before a drier, crisp finish with some grassy floral hop bitterness. Pretty true to style and enjoyable with extreme drinkability.

Pours a cloudy golden orange with a medium creamy/bubbly white head that left rings of lacing down the glass. Aroma of perfume/floral notes, honey, touch of pepper, bready, mixed citrus notes, Saison fermentation esters and some hops coming across in the nose. I like how the Saison and Chouffe yeast work together in the aroma of this one. Flavor of bready pils malt, honey, light hints of Ginger, peppery, light banana, some clove, other Saison yeast esters and again some of the flavor and characteristics I would expect from a beer that has a little bit of the Chouffe in it!

Poured an opaque golden orange color with a medium sized, bubbly white head that left light lacing on the glass. Aroma of coriander, citrus, earth, yeast, wheat, honey, and a bit of sulfur. Taste of citrus, earth, pepper, vanilla, honey, and a lot of yeast, with a dose of sweetness (bubblegum) over top. Still a bit too sweet to compete with the best saisons. Fortunately the ginger seems to take a backseat, which I probably would have knocked it a bit if that was pronounced.

Bottle at Capone’s. Pours a hazy straw gold with a nice, thick white head. The smell is super farm-y, with lots of wheat, pepper, cloves, coriander, rubber, earthy, and citric notes. The taste is really fantastic, but with noticeable flaws. The good parts - pepper, cloves, coriander, ginger, honey, spice, bread and grass. The bad parts - rubber, burnt plastic and cardboard. Overall a great beer, but needs (and obviously will never get) some tweaking. Great body though, and nice, crisp finish.

Bottle given to me by machfive55. Thanks Rich. Served in a Duvel tulip. Pours a hazy light gold color topped by a small white head. Smells of lemon zest, pepper, candi sugar, lightly phenolic. Tastes of biscuit and lemon, lightly tart and fruity. This is a nice saison that needs a little more complexity and more of a zing to the mouthfeel to make it great.

Bottle. Pours with a heavy cloudiness, the color is soft orange, similar in appearance to witbier. Has a mild pepperiness on the tongue, some of your standard coriander, orange peel, white pepper, flower pedals, a little soap.... Belgian yeast character isn’t that clear. Body is hefty and chewy, further suggesting witbier with a chuncky sort of wheat character throughout. No noticeable flaws, well-made, but a bit boring. Still, pretty easy to enjoy.
