Starting with a blend of pale malt and wheat along with honey malt – a pale Canadian barley with a distinctive sweet finish – Scratch #33 includes orange peel, coriander, elderflower and honey bush for a subtle fruit balance that complements the pepper zest of Saison du Pont yeast. Following the boil, the wort passed through our hopback (filled with spices) and then began a rapid ferment at a higher than typical temperature for an ale yeast. Following fermentation, Scratch #33 was bottle-conditioned with Westmalle yeast and warm-aged for two weeks to create a vibrant carbonation with an effervescent finish.

Bottled. A murky amber beer with a huge off-white head. The aroma has notes of hops and malt. The flavor is sweet with notes of malt, hops, and peaches, leading to a dry finish.

Bottle at Papsø. Hazy amber coloured with a small white head. Fruity aroma of spices and caramel with notes of citrus peel. Sweet and fruity flavour of caramel and dried fruits with notes of citrus and burnt sugar. Sweet finish.

Bottle at The Funky 7, Brooklyn. Pours a clear, amber-gold with a sturdy, white head. Spices in the aroma, some coriander, yeast, zesty citrus, orange. Moderately sweet flavor, some lightly grassy bitterness, yeast, clove. Light to medium bodied with fine carbonation. Slightly mustiness in the finish, very light alcohol, orange peel, light grassy hops, some spicy bite. A nice beer overall. Highly drinkable for sure.

A: The pour is a cloudy golden color with a massive white head that eventually dies down to a thin layer that allows one to drink the beer below. S: A big-time spice character to the nose, which you often find in American brewed saisons. Lots of white pepper, orange peel, coriander, and and a floral, honey note. Some soft, cracker malt aromas are present as well. T: The flavor starts off with a lot of sweet oranges as well as some sweet malt and honey. The spices follow this and give off a lot of pepper, coriander, and yeast. Some hints of lemon and orange zest come through on the finish and provide a bit of bitterness. M: Medium in body, maybe a bit heavy for a saison, with a fairly lively carbonation. D: Lots of sweetness and spiciness, but overall a well done saison. Not completely overwhelmed by the spices like a lot of American saisons seem to be.

Bottle poured a clear amber with a small lasting amber head. Aromas of carmel, spice, fruittiness and light yeast. Palate was light to medium bodied and smooth. Flavors of carmel, spice and a hint of fruittiness with a smooth lingering spiced finish.
