COMMERCIAL DESCRIPTION
What is Splinter Blue? Splinter Blue combines three of our favorite things – Dreamweaver, tart cherries, and Brettanyomyces. To begin this process we fermented Dreamweaver wort with Belgian/Lambic yeast blend. After a complete fermentation,… we aged the beer in oak barrels with wild yeast and souring bacteria for one year, and then added eighty pounds of tart cherries for another six months of aging. Splinter Blue pours a cloudy rose color with copious carbonation and a Brettanyomyces yeast funk. The beer’s effervescence highlights it’s sharp acidic cherry flavor, followed by a doughy cereal-like finish that lets you know there’s wheat in there.

Bottle generously shared at PaulUnwin’s sour tasting. Pours an orange color with pink highlights and a whit head. Nose is light malt, tart berries and cherries, nice vinegar character, oak, vinous qualities, and some mild funk. Flavor is similar: lots going on around this one: oak, some light malt, some funk, lots of tart cherry and berry, along with some vinous tartness. Medium in body with lingering berry, funk, and vinegar. Very enjoyable.

In short: A very sharp, very woodsy and tannic pale sour ale that remains very drinkable. Almost Belgian Gueuze-ish. Excellent
How: Bottle 750ml, consumed when over one year old. bottle from my BA trading partner, thanks a lot Heath
The look: Cloudy golden amber body topped by a medium beige head that quickly diminishes to a small persistent beige head
In long: Nose is very nice for those who like the style, leathery brett, lots of funk notes of stinky feet, plenty of oak. Taste is just a damn nice oaky funky sour ale. Some light flavors with some bitter grapefruits, acidic oranges and gooseberries. Lots and lots of oak, and also lots of oak tannins, very astringent, sharp acidic finish. Notes of cheese. Despite the beer being razor-sharp, it somehow doesn’t feel very aggressive and it is quite easy to drink. The description says the beer uses eighty pounds of tart cherries, I didn’t pick any cherry flavour whatsoever. With its funk, extreme attenuation and oak tannins, this is an American sour that has a foot into Belgian lambic territory. Bottle and ratebeer don’t say anything about the abv but I suspect it is rather low, gueuze-like 6% or so, the mouthfeel and carbonation is really gueuze-ish. Another forgotten bottle I found in my basement cellar, I love that cellar, I hang naked picture of myself in this cellar, that will teach him a lesson to anybody who ever breaks into my cellar, you just can’t unsee images like that.

Bottle shared by Chaney. Thanks Brandon! A: The beer appears a hazy pink rose hue with a nice, thick head. The carbonation is high, giving the beer a sound reminiscent of pop rocks. Snap crackle pop! S: Tart cherries, brettanomyces, oak - funky and wild. T: Really funky cherry sour, similar in some regards to Lou Pepe kriek. Wonderful and delicious. The wheat aspect comes through nicely, giving the beer a different feel than a traditional fruit lambic. Very well done. M: Very tart with high carbonation. The beer is acidic but not vinegary. D: This awesome beer gets my stamp of approval and is worthy of attention. I’m very grateful for the opportunity to have sampled it. Bottle at tasting, huge thanks to Allen for cracking this rarity. Pours hazy amber with huge white head, explosive cork that made an impression in the ceiling. Head dissipated quickly on this very carbonated sour. Aromas are lacto, bannanas, oak, cheese funk, white cherry. Taste is ultra tart sour ale with some caramel, lemon rinds, cherry, funk yeast, dark malts, and oak. Silky palate. One of the best sours I have had this year. Cheers.

Tasted on 7/2/12 from a corked and caged 750mL bottle obtained in a trade. Pours cloudy dull pink with a very thick white head that slowly recedes to a couple thin lace bubbles. The nose is really great, with some oaky vanilla, tons of tart cherry, a nice tinge of sour lemon, and just a touch of vinegar. The flavor is muted a bit by very intense carbonation, but the oak comes through nicely with plenty of earthy cherry and sour lemon acidity. The body is, once again, hard to determine because of the very high level of carbonation, with a long tart cherry and acidic lemon finish.

Pours cherry golden amber with an off white head that dissipates quicker than expected. The aroma is sweet candy tart deliciousness with light cherry notes. The flavor brings the same sweet, tart and vague cherry notes on a body that has lost some sourness over 21 months, but maintains a delicious flavor and body overall.

Split a 750ml bottle among people. Poured a orange-pink hue with a well carbonated body and head. This thing is three years old? So much carbonation. Flavor was cherry tart with a sour notes, touch of brett notes. Spice. This is good, but I thought that the body was a bit over-carbonated. If it hadn’t been I’d enjoy it a lot more!
