COMMERCIAL DESCRIPTION
The La Tentation blends three different kinds of fermentation. It’s a Saison recipe that is first fermented with Dupont yeasts, followed by a second fermentation with Belgian witbier yeast which has spent one year maturing in oak barrels. The final part of the fermentation comes from wild yeasts from an orchard at the foot of the Jura Mountains. The yeasts and bacteria found naturally on the skin of native Reinette Blanche apples, coupled with months of barrel aging gives the La Tentation a very refreshing acidity. This acidity is balanced by apple fruitiness and hop bitterness, which is characteristic of old-style Saison. Let yourself be tented !

Drucken på fat på Nya Tröls med Daniel. Bärnstensfärgad, krämigt skum. En karaktärsfull ganska syrlig old-style saison. Mycket ladugård, vetesyrlighet, jästkaraktär, vita druvor och i bakgrunden sötsyrliga äpplen och lite äppelskal. Riktigt bra.

On tap at saisonfest. Cloudy yellow pour aroma of acetic armpit and lemons. Tastes ammonia harsh bretta. Leaves a residue. Alcohol noticeable. Unrefined. I guess that’s normal for a wild but ew anyway.

Bottle, 06/02/2014. Pours hazy straw gold, small dense foamy head rests to a fine haze on the surface, thin ring of lacing around the glass. Aroma is pale straw malts, yeast and mild grassy hops, overlying apple fruitiness, mildly tart, vanilla, vinous character,farmhouse finish. Taste is softly tart fruitiness- apple, white grapes, peach , some yogurt, moderate acidity, pronounce vinous notes, vanilla, oak, woody finish. Light body. Really a nice surprise, reminiscent of some HF beers but not as refined- solid barrel-aged saison.

Draft at the bridge tap house. Pours golden with a thin white head. Solid funk notes on the nose. Definitely get the apple on the tongue. I expected a bit more of the farmhouse but it’s still very tasty.

Poured hazy yellow with a thick, creamy white head. Aroma of lemon zest, artificial sour apple, hay, and strong funk. Sweet, tart, and funky flavor that overpowers the yeast here. Interesting brew for sure but deviates too far from the classic style to still be called a saison. You could be in for a surprise ordering this saison at a bar without a proper description from a knowledgeable bartender.
