COMMERCIAL DESCRIPTION
The La Tentation blends three different kinds of fermentation. It’s a Saison recipe that is first fermented with Dupont yeasts, followed by a second fermentation with Belgian witbier yeast which has spent one year maturing in oak barrels. The final part of the fermentation comes from wild yeasts from an orchard at the foot of the Jura Mountains. The yeasts and bacteria found naturally on the skin of native Reinette Blanche apples, coupled with months of barrel aging gives the La Tentation a very refreshing acidity. This acidity is balanced by apple fruitiness and hop bitterness, which is characteristic of old-style Saison. Let yourself be tented !

Bottle, 06/02/2014. Pours hazy straw gold, small dense foamy head rests to a fine haze on the surface, thin ring of lacing around the glass. Aroma is pale straw malts, yeast and mild grassy hops, overlying apple fruitiness, mildly tart, vanilla, vinous character,farmhouse finish. Taste is softly tart fruitiness- apple, white grapes, peach , some yogurt, moderate acidity, pronounce vinous notes, vanilla, oak, woody finish. Light body. Really a nice surprise, reminiscent of some HF beers but not as refined- solid barrel-aged saison.

Bue en bouteille de 75cl chez Chloé et François, couleur cuivrée, pas de mousse et quasi pas d’effervescence. Nez sur la pomme, le raison et le lactique. En bouche attaque acide lactique, puis la pomme, continuité sur le pruneau belle continuité acide qui tient bien en bouche bel équilibre final sur le bois.

A golden color with a white head. Lemons, vinegar, and spices in the aroma. The flavor is citrusy and sour with some lemons, sour apples going on. Aftertaste is also sour. Overall a good beer.

Pours a hazy yellowish/gold color. Aromas of tart fruit, bread, hint of citrus, and yeasty. Flavor is malty/citrus. Leaves a yeasty orange aftertaste.

At James’ for his 12k tasting. Pours a clear gold with a thin white head. Soft earthy hops on the nose, a bit of musk, apple. Medium-bodied, don’t really get red wine so much, but nice wood, a touch of apple and fruit. Wood into the finish, a touch of soft musk.

ahh, man. why would you ever brew with apples .. . very sweet stuff, apple juice, mulled wine barrels, vanilla, and healthy cereal .. . sticky and empty finish .. pass on this .. . . let them go. you’ll stay here with me. we’ll go bowling.

750ml served in a tulip glass. Pours a cloudy yellow color forming a medium to small white head with small retention and some small spotty lacings left in the glass. Smell is very fruity and sour. Strong notes of apples, apple vinegar, apricot, green grapes, oak, sweet pale grains and flowery hops. Metallic. Slightly sweet upfront that becomes quickly dry and sour. String notes of apples, apple vinegar, apricot, green grapes, oak and citrus hops. Mild hops bitterness. Metallic hints. Medium body and carbonation. Apple cider aftertaste. Excellent drinkability. Much more to a wild/sour than to a Saison. However, quite smooth and easy drinking to a Sour Ale. Excellent.

Cloudy orange color. The smell has a mild milky sourness. The taste is mildly sour and has a solid fruity apple note. The aftertaste is calm and also light milky.
