Née de la rencontre fortuite d’une stout forte et d’une fermentation d’abricots du Valais qui jamais n’atteignit l’alambic du distillateur auquel elle était destinée, notre Oud Bruin (flamand pour "vieille brune") est une interprétation assez peu orthodoxe de ses cousines belges.
Elle en garde cependant le délicat équilibre aigre-doux, entre une solide ossature maltée assise sur des malts, aux notes caramélisées, chocolatées, rôties et fruitées, dans laquelle vient se fondre le vin d’abricot avec son acidité lactique, ses notes de cuir et d’étable liées aux levures sauvages, et une discrète note d’abricot.
La finale est légèrement amère et le tout se déroule tout en harmonie sur le palais.
Une bière unique, d’une grande buvabilité mais joliment complexe, entre douceur, fruité et acidité. Elle se mariera avec l’agneau, le canard, les moules, les crustacés ou des fromages à pâte molle ou mi-dure.
Série limitée de 1.200 bouteilles de 75cl, 7.2% d’alcool/volume, 35 unités internationales d’amertume (IBU).

Draft at Memphis. Pours a cloudy reddish brown with some thin head. Notes of dark fruits, vinegar, funk, cherry. Fairly tart with a medium body and soft carbonation.

Dried apricot, intense lactic acid, oak vanilla. Chocolate malt smoothness. 35 ibus as a backing choir to a cultured vinegar Oud bruin - pas mal... Plenty of character with a lot of aged/dried/barrel layers interspersed, whilst remaining very drinkable and refreshing = expert brew. Chapeau pour la Suisse romande voor deze Oud Bruin!

750ml bottle. Poured a ruby color with an averaged sized tan head. Aromas of cherries, light vinegar with some lighter funky, earthiness. Tastes of cherries, light vinegar, wood, some funk, and some caramel.

750ml bottle served in tulip: Aged over two years... pours a murky brownish hue with ruby highlights topped by a fading head and not much lace. The aroma is soured cherries and apricots, roasted and caramelized malts, horse blanket and cheese. Heavy on the Acetobacter and Brettanomyces with a layer of malt and oak found as well. This has a brilliant balance but does have a slight band-aid nature upon the finish that would be my only criticism. Dry yet watery... yeah you know what I mean... soft carbonation. I like this but is it an example of a well aged bottle or a example of a very good beer in general?

UPDATED: SEP 16, 2013 Pours a murky reddish brown from the bottle with no real head or lacing. Aroma is caramel and dark toffee notes, almost bba qualities. Taste is sour chocolate and cherries, earthy funk. Really odd, but pretty damn good. Even better on tap!

Bottle 75cl, from Allen thanks. An amber dark beer with low head, nose is nice and typically on oude bruin with vinegar, acidity and this kind of burnt wood. Aroma is a bit more dry and acid than usual oude bruin, notes of chocolate, cherry, tart, vinegar, burnt wood / fruit.

UPDATED: FEB 26, 2013 Bottle courtesy of Dennis during his going away party at Blind Tiger with Linh, Max, Caroline and Will. Pours a deep murky brown body with thin off white lacing, Aroma is super fishy - literally like fish, fish oil, Vinegar, sour dark fruit and light funk. Mouthfeel is medium and tart with notes of tart dark fruits, prune, raisin, light funk and vinegar. Very weird.

Bottle at Eulogy. Very dark ruby pour with a foamy ring. Dark fragrant sour. Bing cherry. Sour dark wood. Black currents. Medium sour dark ale. Burnt corn/grain notes but the red plum sour dominates.

Bottle. Pours hazy brown/ruby with thin, creamy off-white head; decent retention and spare lacing. Aroma is sour fruit, caramel and cookie malt, floral hops, strawberries, light vanilla, and light spice. Flavor is sour fruit esters, toasted malts, floral hops, and light honey; dry, lightly sweet finish. Medium body and carbonation. This is almost the Jean Claude Vann Damme of sour browns.
