Née de la rencontre fortuite d’une stout forte et d’une fermentation d’abricots du Valais qui jamais n’atteignit l’alambic du distillateur auquel elle était destinée, notre Oud Bruin (flamand pour "vieille brune") est une interprétation assez peu orthodoxe de ses cousines belges.
Elle en garde cependant le délicat équilibre aigre-doux, entre une solide ossature maltée assise sur des malts, aux notes caramélisées, chocolatées, rôties et fruitées, dans laquelle vient se fondre le vin d’abricot avec son acidité lactique, ses notes de cuir et d’étable liées aux levures sauvages, et une discrète note d’abricot.
La finale est légèrement amère et le tout se déroule tout en harmonie sur le palais.
Une bière unique, d’une grande buvabilité mais joliment complexe, entre douceur, fruité et acidité. Elle se mariera avec l’agneau, le canard, les moules, les crustacés ou des fromages à pâte molle ou mi-dure.
Série limitée de 1.200 bouteilles de 75cl, 7.2% d’alcool/volume, 35 unités internationales d’amertume (IBU).

Tap at the Bishops Arms (Savoy), Malmo. Poured a clear dark brown with a frothy light tan head. The aroma is yeast and acidic citrus fruit. The flavour is medium sour with a light acid weak vinegar palate. Medium bodied with soft carbonation. Lots of sourness up front in the aroma and the flavour but not so much in the palate and the finish. Maybe this is the way all sours should be.

On tap at Teresa’s Next Door. Pours murky reddish brown with tan head. Apple, barnyard, toffee, chocolate, dark fruit. High bitterness, moderately sweet. Full body with some mild carbonation.

Bottle shared at Craft Ale House. Poured turbid reddish brown with khaki head. Nose was tart cherry fruit, funky yeasty malt. Tasted tart, lactic, funky, with cherry notes, yeastiness in the finish, and a high complexity.

Draft @ Bishops Arms Savoy, Malmö. Pours a dark brown reddish color with a small off-white head. Has a fruity malty woody sour tart aroma. Fruity sour tart woody flavor with hints of caramel. Has a fruity malty sour tart finish.

750ml bottle from...a shop in Tucson, bought 12/12. Clear, deep amber pour with a short, brief off-white head which leaves no lace. Nose is lightly sweet malt - like a wee heavy - and a hint of tartness. Medium body with low carbonation, which may be a function of a year in the cellar. Green apples, medium roast malt, wood, leather and lemons. Finish is quite clean and nicely balanced: mostly tart, but with a light fruity sweetness.

Draft at The Sixgill in Fremont, WA. Rating #1800. Leathery black-brown with some light showing through. Fresh barrel and brewhouse aromas, lovely and tart. Cherry and wood. Big rising tartness, an encompassing sour, cherry and dark leather. Refreshingly rich and tart. Incredible flavor, an impressive beer

Red tinged black pour. Dusty tart cherry on the nose. Currants and red wine. Super tart - a puckerer of a Flanders red - I can feel this one in my jaw bones. Really tasty!
