Cane and Ebel is one of a series of special limited-run beers in styles that are more extreme or unusual. This unique red rye beer is full of hop flavor and aroma. We add 35 pounds of Thai palm sugar to each batch. The sugar does not add much sweetness to the beer, but rather a fruity and vanilla-like flavor. A new hop variety called Summit is really showcased here. This 18%AA hop is also very aromatic which gives a pungent citrus aroma. Then we heavily dry hopped the beer with Simcoe.

Cane and Ebel makes for interesting beer. The first sip is bitter, dry, and herbal, but also floral and citric and semisweet and doughy and so on and so forth. Hard to nail down, in other words. For me, the rye pulls all the varying flavors together, keeping both the hops and palm syrup in check. The description up top could use some updating; the beer’s year-round now, and the hops vary.

bottle @ Jungle Jim’s / Eastgate OH --- Clear ruby brown color, off-white head, lace cobwebs. Aroma of malt. Taste is malt and rye that rotate with citrus hops on an even-steven basis all the way through a medium finish. This is a rye dominant brew that is well done.

Bottle@ABC the Tavern. Medium aroma with resin and slight hopps. Brown color and small natural white head. Semi-hazy liquid. Medium/strong taste with slightly sour raisins, sweet bit roasted malts. Balanced with medium/long aftertaste with hoppy malty raisins. Medium/light body with medium carbonation. Overall high quality balanced product.

Tap. Pours a very dark red tinted amber with an off white head. Smells of tropical fruit, passion fruit, a touch of sweetness. Taste is somewhat sweet with a touch of rye spice. A moderate bitterness. To me, it is all coming across as a bit messy. The sweetness and the bitterness linger in the finish. Average carbonation, medium to medium+ bodied.
