COMMERCIAL DESCRIPTION
Catholic monasteries were historically major centers of brewing and learning, and their educational model eveolved into the modern university. Two Roads brewers and some beer-loving professors in Sacred Heart University’s biology department collaborated to brew this beer in celebration of that history. It is fermented with a yeast strain from a centuries-old monastic brewery currently operating in Belgium. This Abbey Single is brewed to be distinctive in flavor, yet approachable and refreshing.

Authentic Abbey blond (although low in ABV for the style). Yeasty with light citrus, some banana, apricot and apple. Refreshing.

Bomber - hazy straw color - soapy lace - nose has esters of pear and apple, some grape must, dusty yeast, moderate phenols of white pepper, a touch of clove - soft carbonation - subtle, well-integrated flavors of rustic grain, mildly spicy phenolics, pear, white wine - finish is moderately bitter, with slight mineral, cobweb - nicely done abbey single (though not as good as the southampton abbey single, which is kind of what I was hoping for here) - solid.

Bottle... Pours cloudy and deeply golden with a small, wispy, white head. The aroma is a mishmash of stone fruits, golden raisins, clove, dark bread and bread dough. Full-bodied and lightly creamy with vibrant carbonation. The flavor is tangy, snappy, bright and fruity with a notation of clove. The finish is lackluster and falls kind of flat. I’m not a fan of the style, but I can’t say Phil doesn’t know what he’s doing. He wrote the book on the history of Belgian and French farmhouse ales. Literally.

A medium golden body that was mostly clear. A nice white head. Mild yeasty aroma and some cereal grains. A hint of barnyard notes. Flavor had mild ester notes and light malts. Carbonation was adequate. Nothing special. ---Rated via Beer Buddy for iPhone

Bottle from Dick’s World of Wines. Aroma is Pils and honey malt, medium apple and pear esters, black pepper and ginger with light spicy hops and earthy yeast notes. Pours mostly clear gold with a medium, creamy white head, medium retention with good lacing. Flavor is sweet malt forward, black pepper and ginger, coriander, light spicy hops and bitterness with pear esters and a dry finish. Light body and moderate carbonation.

Bomber. This is hazed and golden with a white head that leaves nice lacing. I smell pale malts and a little yeast. An odd hop bitter flavor to begin. Then a little yeast follows and that first flavor subsides some. After that black pepper is noted. I keep tasting just a bit of buttered corn. More sugar than anything Belgium. This is uninspired even for a Blonde.

Pours gold into a tulip. Bright white head with medium retention recedes leaving scant sheets. Sourdough and citrus aromas. Medium bodied with sourdough and marshmallow upfront turning to slight band-aid in the dry bread finish. Taste becomes unpleasant as it warms.

Moderate yeast aroma. Cloudy yellow color with a large white head. Very mild bitter beginning with a sweet middle that fares slightly in the finish. Light palate.
