COMMERCIAL DESCRIPTION
Le SAGARNO (littéralement vin de pomme) de Txopinondo est une boisson fermentée à base de pomme, élevée sur lie en fût pendant un minimum de 6 mois, rafraîchissante et fruitée, à déguster bien fraîche (env. 12°C) avec des grillades de poisson ou de viande. Nous le produisons selon une méthode artisanale ancestrale à partir de pommes du terroir et d’ailleurs.

Bottle from The Davis Beer Shoppe. Pours hazy gold. Aroma is slightly tart apple. Med minus body. It is very dry, has a certain tartness, and tastes of apples and wood. Finishes quite dry. Good.

Refrigerated 75 cl green bottle with screw off top poured into a glass. Clear straw no head, medium body, no carbonation, and no lacing. Aroma is light tang, and taste is light tart, some oak, some apple. Pretty good cider, better as it warms.

750 ml bottle, 30.04.15-5 stamped on the back label. Served in a Prairie Teku glass, the cider pours a hazy straw gold color with pretty much no head at all. It smells like green apples, oak and some funk. I think the taste is similar to the aroma, but there’s also some earthiness and lemon peel noticeable. Mouthfeel/body is light/medium, it’s a bit coating with low carbonation. I admit that I haven’t tried many ciders, but I liked this one. It’s nice and tart, and also enjoyable. $10.99 a bottle.

Bottle at home. Pours lightly cloudy yellow with small effervescent bubbles, though no head forms. Aroma is earthy, barnyard and tart apples and yeast. Flavor is lightly tart apples, funky yeast and a dry finish. Light body and carbonation.

In short: A pale Sidra with strong funk. Funky!
How: From the wood barrel at Sagardoetxea, Astigarraga Spain.
The look: Cloudy yellow-ish body with almost no head.
To me a typical Sidra is: Funky aroma of medium intensity with many light color fruits in the back (not just apples). Body is medium in size, a texture that is both juicy and doughy and with minimal carbonation. Taste is a lot less apple-forward than a regular cider with apples but also various light color tropical/citrus/exotic fruits. Yeast presence accompanied by a bready sensation. Typical Sidras have a mild sourness and ends with a mild-medium acidic bite. Thirst quenching and also a bit nourishing.
In long: Paler color than the typical Sidra with flavors that are mostly as above except with a stronger funk presence, and I love funk. A funky Sidra is basically like an infected regular cider, and I just love infection, there’s not a single penis enlargement weblink I haven’t clicked.

Bottle at DC Epic Sour Tasting 2014. Cloudy pale yellow color. Aroma of funky sour apple flesh and skins. Taste is softly sour and fruity. Delicious.

This cider here, this cider I had @ the Grand Tasting....
Pours very hazy, very pale, & very still.

The aroma is earthy with plenty of tart fruit. It’s got a bit of apple character and a lot of dusty cellar type of stuff going on.

The flavor is super tart, almost bracingly (but enjoyably) acidic. It’s got a fair amount of apple skin, and apple flesh with some earthy minerallity.

Pretty cool stuff.

Bottle @ RBSG 2014 Grand Tasting. Hazed straw pour with a white head. Funky, sour aroma. Lots of lemon and green apple. Somewhat leathery. Flavor is quite sour. Mild apple sweetness and a hint of pear. Plenty of lemon, green grapes, and a leathery funk. Slight cobweb. Refreshing.

Sample at SRBG Grand Tasting 2014. Pours a cloudy pale gold with a small white head. Aroma of apples and funk. Taste is green apples, funk, grapes, and grass. Very nice cider.

Sampled at the RBSG14 Grand Tasting - Pours pale yellow with a small white head. The aroma has semi-sweet apples, candy notes and richness - nice. It has a medium light clean body with nice semi-sharp carbonation. The flavor has a balance of sweetness and tartness and is very clean and refreshing. Solid cider.
