COMMERCIAL DESCRIPTION
Le SAGARNO (littéralement vin de pomme) de Txopinondo est une boisson fermentée à base de pomme, élevée sur lie en fût pendant un minimum de 6 mois, rafraîchissante et fruitée, à déguster bien fraîche (env. 12°C) avec des grillades de poisson ou de viande. Nous le produisons selon une méthode artisanale ancestrale à partir de pommes du terroir et d’ailleurs.

UPDATED: JAN 21, 2014 75 cL bottle from Beer Run, 12/14/13. This is the 1000th brewery I have rated. Poured from about 2.5 feet. Pours a hazy pale orange color with a thin wisp of white fizzy head. Aroma of tart apples with some barnyard and earth. The taste is tart, dry apples with pepper and an earthy finish. Medium bodied, lingering tartness, low carbonation, refreshing. This bottle will be emptied quickly. Very nice cider.

750mL from P St Whole Foods in DC. Pours low carbonation, fizzing out white soda foam. Beautifully bright glowing straw pour with green highlights. Nose is pretty funky off the bat: some crazy moldy peach, ripened pithy papaya, fresh and tropical like a passionfruit Berliner Weisse. Taste is holy monkey sour, bracing citric tang with fresh strawberry acid, pomelo pulp, strawberry limeade. Quenching, refreshing. Quick, lactic lemonade finish. Extremely light bodied. Really awesome. My first Basque sidra I think and I will now be on a quest for more!

Bottle. Pours with a hazy pale yellow hued body with a quick to fade white head. Aromas are of light funk, lactic acid, sulfur, tannic apples, light barnyard, earth, black pepper and sage. Flavors are quite tart, acidic, strong green apple, huge apple tannin, with moderate earthy funk. Nearly lemon juice acidity. Balance is a little bit skewed, but still quite tasty. Moderate to bubbly carbonation, puckering and a thin body.

Bottle courtesy of Max at Andy’s New Years Eve party/tasting/Fluxx tournament. Pours a slightly hazed gold with touches of a white head. Soft apples on the nose, slightly dry and funky. Sweet but it dries out very quickly. Nice soft funkiness, acid, muskiness. Very interesting, dry and almost bretty at the end with a touch of smokiness. Sweetness comes back long after the finish. Liked this a bunch.

750ml bottle, shared by Jay. Pours a paler yellow color. Minimal white head, even with an aggressive pour. Very interesting funky flavor, kind of gueuzy, I like that. Jay tells me this is because it’s brewed with natural yeast, very cool. Some apple of course. Light tart taste, moderate sweet. Medium body, good smooth very light carbonation, more dry finish. Enjoyable, unique, tart funky complex cider. Much better than expected.

Bottle shared by beastiefan2k - thanks, Eugene! - hazy light gold, moderate effervescence - nose is tart, mildly lactic, moderately phenolic, with a mild background fruit skin funkiness - very tart and quenching flavor - mostly dry, with just a light apple sweetness through the middle - tangy lactic tang before a bone dry, lightly funky finish - nice cider.

750 ml bottle to snifter (6% abv; shared with the Mrs.). Looks solid; a mostly transparent gold with soft carbonation and razor-thin white lacing that dissipates quickly. Smells and tastes like weak cider with an average (at best), fairly tart mouthfeel. An absolute ripoff that I would not buy again. $10.99/750 ml; U jokin r wat?

Bottle from Proof. Light yellow pour with almost no head. Aroma is tart funk and apple. Tastes are moderately tart, earthy, sweet apple. Finishes dry. Kind of one dimensional, but very nice.
