I probably didn't let it age enough. The alcohol was still too hot, and the overall flavor was somewhat lacking. Mild nice sherry notes when it warmed up.

4 AROMA 7/10 APPEARANCE 4/5 TASTE 9/10 PALATE 3/5 OVERALL 17/20
From the corked, caged bottle dated 02/22/13. Cellared for six months. It ours dark brown with reddish hues and a softy, beige head that fades slowly and leaves lacing in its wake. Subtle aromas on the nose but it includes barley malts, vanilla, molasses, and some bourbon booze. Medium to bold body. Drink it slowly because it will get into your head with that 11+% ABV. Loads of sweetness but also a hoppy, boozy bite.

3.7 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20
750ml, bottled on 5/20/11. Aroma of toffee, faint bourbon, wood, caramel, spice, vanilla, faint apple and dark bread. Dark red-brown in color, head is uneven, fine and lasting. Flavor profile is full of dark, dried fruit, darkly sweet malt, faint bourbon and madeira, very light medicinal alcohol, and some mild earthiness. Consistency of iced tea, light in effervescence, body is fairly full, not as much as one might imagine, though. Enjoyable for sure, but not something I would recommend going far out of your way to seek.

4.1 AROMA 8/10 APPEARANCE 5/5 TASTE 7/10 PALATE 4/5 OVERALL 17/20
Pours dark and the color of burnt brown sugar. Deep like good wood. Has lighter brown highlights that accent this fabulously pretty beer. Fat beige head of creamy foam that fell slowly, refreshed with every turn and clung to the glass like it was in love. Has a brilliance from clarity too. left all kinds of lace in rings and in sheets on the glass.
Nose is scrumptious. Bourbon and oak. Citrus and pine. Big smooth malt. Breaddy, full and sweet with toffee and caramel. Toasted grain and little nutty as well. Vanilla. Then when you ar eleast expecting anything else . . . chocolate.
Taste is beer candy. The velvety smooth, bourbon together with the vanilla, oak and toffee all combine for a delicious taste. The chocolate is smooth and sweet. The malt is dry and a little earthy which helps all these dark flavors to be at their very richest. Then the bread continues to deliver this outstanding malt to itís dark depths and the grain is deep but not burnt. There is a nice citrus with a faint pine on the palate to back up all these tremendous flavors and to add depth . It glides over the tongue full and flavorful. The mouthfeel is a little thick and sticky and it has a medium/full body.
The toffee continues to deepen and so does the nutty quality as this warms. For as high an abv there is no alcohol on the nose and on the palate it translates to a smooth warmth. The aftertaste is delicious and sweet. The bourbon drops off about mid drink but you are left with a toffee candy like beer that is so easy to drink. You might forget the alcohol so be careful. Uinta has done a good thing with this beer.

3.8 AROMA 7/10 APPEARANCE 5/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20
From 750ml bottle ($$) - A very smooth treat. Flavors meld pretty well, but there is just something out of place that keeps this from a higher rating. Alcohol well hidden on this heavy hitter.

Had this beer at Larsenís Steakhouse. Surprised and impressed. Not normally into IPAs, but this dark IPA exceeded expectations. Most of us thoroughly enjoyed but one of us went head in the hedges. Good times.
