Thick brown uinfiltered color with no real head. Not a big fan of the style, so keep that in mind.... smells and tastes of Belgium yeast. Decent on the palate - not too thin. Not my favorite - but seemingly well made and decent overall. elelwarren (132), SF Bay area, California, USA Dec 31, 2007 Updated: Jan 23, 2008Not sure whether this is what I drank. Waitress said they had a smoked bock, which I tasted. Of the 5 brews I tasted at Uncle Billy’s, this was the darkest & had the largest head. Nose quite oaky. Flavor is mildly malty, then the smokiness hits: bacon, Texas woodfire, quite amazing. unluckilly, it started tasting odd as I kept drinking. First smoked beer I’ve tried...I couldn’t taste any spices or yeasts. fly (1240), austin, Tejas, USA Dec 12, 2007 Purty dang tasty. almost like that Brian guy has a clue what he’s doing. a well made, smoky weizenbock.
,mmmmmmmm lb4lb (1377), Austin, Texas, USA Dec 6, 2007 Pours cloudy brown with a creamy lasting beige head. Smell is wheaty, lightly spiced and gooey sweet honey. Taste is cream of wheat like, honey and coriander. Full rich creamy mouthfeel and quite sweet. Pretty nice, although I wasn’t picking up on any of the 15% smoked malt that was used in making this one. newshound (20), Austin, Texas, USA Dec 5, 2007 It’s Uncle Billy’s Brew & Que’s first Christmas here in Austin. For the occasion, brewer Brian Peters and Austin Homebrew Supply’s Charles Culp joined forces and created a holiday ale called Yule Be Bock. It hit the tap last night (12/4/07). I gleefully suggest it, especially for fans of spiced beers.
Yule Be Bock is a Weizen Bock with an 8% ABV, pretty strong for a dark wheat beer, all the better for the holiday spirit! Pours a very cloudy, creamy, hazy brown with color textures of a cider. Nice foamy khaki head packing spicy aroma of clove, banana and apricot.
The banana continues into the first sip. Throughout the session, I found flavors of banana nut bread, gingerbread, and Granny Smith apple. The beer has a medium-misty-body. The aftertaste leaves a gingery sensation with banana creme on top.
Last night a was pretty chilly 51-degrees and we were outside, so the beer never really warmed up. I look forward to heading back to Billy’s within the week to get a warmed-up session indoors... I bet more malt breadiness comes out. And it will be cool to see if the sourness increases or fades with time.
I’ll be back for Yule Be Bock.
