A big malty ale brewed with a variety of chocolate and caramel malts giving it a rich, complex body and smooth malt sweetness due to a lower fermentation temperature.

Sampler at brewpub. Comes brown with small biege head. Aroma of malt and chocolate. Taste is malt, chocolate, caramel, and some hops. Pretty good.

Males y mapley aroma. Brown ale with the smallest of head. Sweet nutty maple taste which is cut by some bittering hops. Sharp bite and mouthfeel. Caramelized sugar finish.

Pours out a deep tan brown, pretty good foam .. . some bitter caramel.. . light mouth, hides the abv very well .. . pretty clean stuff .. . decent but a tad to thin .. . What are you? Mother Cabrini? You never touch the stuff?

Draft sampler at Uncle Buck’s Brewery and Steakhouse in Grapevine, Texas (suburban Dallas) on July 25, 2011. Small white head, dark brown/amber color, nice malty/musty aroma, light to medium malty flavor. Taste could be more assertive but not bad for the style.

5 oz sampler on tap at the bar - nice chocolate caramel taste and aroma. A little sweet but smooth. I did not catch the rye malts or any hops. But still had the bitterness that is expected in a brown ...it was just a little hidden by the sweetness. Overall a good beer.

(Draught) Pours an amber-brown body with a small bubbly off-white head. Aroma of cat litter, caramel, figs, nuts, and mustiness. Flavor of caramel, chocolate, toasted nuts, and roasted malt.

I tried this brewery again when I heard they got a new brewmaster. I have heard all of the recipes are new. The beer pours dark brown with a white head. The aroma is strong caramel malt. The flavor is caramel malt, chocolate and some earthy hops. Medium mouthfeel and medium carbonation. Of the six Uncle Buck’s beers tried, this was the only one that was even average and even then, it is nothing special.
