kepano (239), Meudon, France Dec 8, 2005 Updated: Jan 9, 2006 Éphémère Cassis could not be named more appropriately, indeed every aspect of the beer reflects the ephemeral quality depicted by the nymph dwelling on the label. As you pour the first half a beautiful melon-tinted topaz hue glimmers in the glass and the light salmon-colored head rises gently above a slightly cloudy liquid. The passing aroma is rich and fruity, black currant is of course prominent but raspberry appears in the background as well. The nose can be compared to lambics such as Lindemans Cassis but the flavor and mouthfeel are entirely different. A distinct witbier taste is instantly recognized by the wheat and chalk tones that provide a certain "beer flavor" washing out the intense black currants found in the aroma. The second pour produces a much darker, murky peach pink body ostensibly due to the yeast residue. Sweet berries initially caress the tip of your tongue but rapidly the sharp prickling sensation of high carbonation forces an early swallow and leaves only an unpleasantly chalky sourness. This contrast is exacerbated by the salty notes that appear as it warms. It is unfortunate for this brew to have such a disappointing flavor as the appearance and nose were alone quite promising. An easily forgotten beer.

Poured with a huge head. Color is a pleasing, cloudy pink.
Aroma is not good, somewhat like unripened currants. Taste starts like blueberries, and finishes quite nicely with no after taste.
I prefer the apple variety of this beer. probstk (1007), Nepean, Ontario, Canada Oct 20, 2009 341 ml bottle from Trappe a Fromage, served cold in a tulip glass.
App.: Cloudy pink-amber with a fair light pink head.
Aroma: An oddly savoury berry fruitiness, definitely blue fruit – blueberries or currants, light spiciness, light grassy/wet hay,
Palate: Medium-ish body with lively effervescence.
Flav.: Still lots of blue fruit, some wheat and wet hay, some light spiciness, quite nice actually; dry with minimal bitterness.
A great fruit beer. Slacks (481), Bolton, Ontario, Canada Oct 10, 2009 Draught @ Bar Volo, Toronto, ON: Pours bright rosy pink, a small white/pink head that left quickly. Smells very sweet and sugary with a vat full of acidic currants. The sweetness is just as present in the taste, cloyingly so, coupled with an extremely watery consistency. I love Unibroue but I’ll hold this up as an uncharacteristic failure, especially next to the far preferable apple version. wickedpete (625), Lexington Park, Maryland, USA Sep 19, 2009 Rosy yellow, champagne-like body. A tall pink head forms then fades while a steady stream of bubbles can be seen rising. A pleasantly sweet, soft aroma of fresh red fruits-raspberries and strawberries- a hint of brown sugar rounds it out. The flavor is almost nonexistent. Very watery and only a light hint of fruit. The palate is so thin and weak that even the effervescence, that is so clearly visible, is hardly noticeable on the palate. This turned out to be a drain pour, a flavorless waste. Sammy (3934), Toronto, Ontario, Canada Sep 15, 2009 On-tap at Chancey Smith. Pinkish-blackberry colour. Sweet aroma, taste is sweetish yet drying, a bit above average mouthfeel. Like a fruit wine and a beer combined. Spab (236), Toronto, Ontario, Canada Sep 12, 2009 On tap at the Rebel House. Pours a murky pinkish orange with small white head. Light black currant and yeast aroma. Nice sour black currant flavour with slight spiciness. Nice linering sour finish. Slightly watery though. All in all pretty interesting and enjoyable.
