3.5 AROMA 7/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 15/20
Pours hazy deep gold with some particulate, one finger of white head diminishing rapidly to a thin skim, no lacing. (3/5) Nose is bready yeast, apples and pears, spices. (7/10) Taste is moderate bitter, mild sweet, mild tart. (7/10) Light to medium body, prickly to moderate sustained carbonation, and a dry mildly bitter and tart finish. (3/5)
Some cidery apple notes and a doughy, bread-like yeast initially dominate the flavour. As that fades, there’s a moderate bitter and a mild tartness that linger. Despite the quick recession of the head, there’s significant champagne-like carbonation that persists all the way to the end of the glass. The high ABV is seriously well-hidden, making this a very sneaky sipper. The character is about what I’d expect given its long cellaring, but that’s by no means a negative. That being said, I’ll have to try it again fresh, just for comparison. (15/20)

3.8 AROMA 8/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20
Instable à l’ouverture.Ambrée orangée, voilée. Mousse blanche efferverscente.
Au nez sucrée-fruitée, levures, légèrement épicée.
En bouche plutôt sucrée sur les fruits, je dirais abricot. Très légèrement acide-citrus. Bien pétillante et sèche en fin de bouche, type Champagne. Légère amertume.

3.5 AROMA 6/10 APPEARANCE 5/5 TASTE 7/10 PALATE 3/5 OVERALL 14/20
The very tight cork on this took some effort to remove. This looks like a Belgian ale, with its big, foaming lid on lambent, butterscotch pour. The aroma is yeasty and lightly fruity to start. It tastes tangy, sweet, and rich, with flavors of golden raisins and hefeweizen, plus a little coriander. There is a cidery note in there too. It is a "triple wheat" with spices, according to the label. At 9% it is more potent than it seems at first. The flavors clash a little, but it is still quite good overall.

4.2 AROMA 7/10 APPEARANCE 4/5 TASTE 9/10 PALATE 5/5 OVERALL 17/20
Hazy brown orange, large very fizzy head. Smell is cork, earth, light fruit notes, cereal and yeast. Taste is fizzy and sweet; spicy, bread, banana, apricot, creamy citrus. I feel like a medieval king drinking this.

4.4 AROMA 9/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20
Don De Dieu has a medium, off-white head, a brilliant, bubbly, orange appearance, with lots of bubble streams, many white, fluffy chunks, and moderate lacing left on the glass. The aroma is sweet, very sugary, spicy, and of light fruits. Taste is of figs, dates, fruit cake, bready malt, various spices, and white cake icing. Mouthfeel is medium to heavy and prickly, and Don De Dieu finishes champagne dry and quite drinkable. RJT
