De couleur pêche foncé ambré avec peu de mousse et léger dépôt dans le verre. Senteur de sucre brun, agrume, pêche, meringue, yogourt au pêche, fraise, pomme et madère. Un peu de mucade, de thym et de canelle subtiles confèrent à cette bière une jouissance olfactive. Un goût: bien balancé, bien gazéfié et d’une aisance hors du commun. Un léger goût de muscade, de sirop d’érable, d’orange, de mangue, légèrement aigre avec un goût minime d’alcool laissant plutôt les ingrédients travailler sur mes papilles. Je ne pourrais expliquer mais aujourd’hui ce divin liquide mérite le nom de don de dieu. La bière agresse plutôt mon palais, mes gencives et mes papilles dans le bon sens du terme. Je suis bouche bée, il ne me reste qu’à dire que je vie un moment exceptionnelle de plénitude.(9-4-9-5-19)= 4.6
Partagé avec french tikler, pyrozoid et agaguk. Boueille de 750ml acheté à l’été à la trappe à fromage à plaisance et millésimé le 10 mai 2004. Apparence jaune ambré avec un petit voile orangé avec moyennement de mousse et un bon dépôt de levure en suspension. Arômes madérisé avec une légère senteur de liège, de pêche et abricot avec une touche acidulé de pomme verte. L’alcool n’est pas présente ou presque mais le goût est principalement une gelé d’abricots séchés avec une touche salé et de gingembre. Sweet, citric & yummy aroma: cotton candy, tangerine, honey, apricot., & caramel apple. Ripened fruit dominates the flavor: apple (not sour apple, mind you) and plum. This beer is sedimented with yeast, so a secondary fermentation takes place in the bottle, conditioning the beer, and giving it more natural carbonation. The nose is complex with a multitude of aromas. Fruity esters, spicy and yeasty aromas, marry with aromas of wheat and pale malts, and peppery alcohol. The palate is as complex and delicious as the nose, just jam packed with flavors. Sweet malt, pale malt, tart wheat, funky yeast, and more fruity esters, glide over the tongue. Don de Dieu finishes with more malty and yeasty flavors up front, then ends with a warming, peppery alcohol burn.
This beer weighs in at 9% abv, making it a quite heady brew. This beer makes a wonderful aperitif beer, and would work well in a number of gourmet dishes. This would pair well with cheeses, fish, fowl, pork, or even wild game such as pheasant, quail, or caribou. This brew works particularly well in the cooler weather, and should be slowly sipped and savored. It is a wonderful beer to enjoy this time of year, and worth seeking out. I enjoyed a 750ml bottle of this gift from God, which retails for about $7. This beer would also make a great night cap to have, as you read a good book before bed time. A very impressive beer, from a very impressive brewery.
