I tried their Ephemere Apple, a rare venture for Rings into the world of fruit beers. Though my German brewing roots typically prohibit much palate for spiced or fruit beers, I do keep trying ’em, just in case something gives. Ephemere pours blonde, as its base is a simple Belgian wit. There’s a huge Granny Smith nose, however, which leaves no doubt as to the direction this one will go. It has a slightly sour bite, off-balanced with a nice fruitiness that is (thankfully) a mere fraction of the bouquet. The body is thin and it’s highly carbonated, perhaps due to age, as the bottle conditioning may be a little “overly-done,” to quote Mel Blanc. It finishes tart, with lingering sour notes. While this wasn’t horrible—as I feared—it still wasn’t good. Despite my reluctance, I have had a few decent, and even “good” fruit beers. Unfortunately, this wasn’t one of them, although I suspect age may have been the greatest factor in its lack of balance.

12 oz bottle served in pint glass {from notes}. A - hazy yellow-gold with off white head. Head has decent retention. S - VERY fruity. I could quickly and easily smell this beer from 2 feet away after pouring. Aroma mainly that of green apple - a bit candy like - plus spices (coriander). In fact, would not guess this was a beer from odor alone. T - while the aroma is shockingly sweet, the hefty sweet flavor is mostly countered by a good bit of sourness. A pretty good sour/sweet balance. Still, with this flavor, I’m a bit surprised this is marketed as an "ale" rather than a "cider". M - light body; medium carbonation; dry finish. O: once I adjusted to the strong apple flavor, I started to really enjoy this ’beer’. As fruity as a cider, but with a quite different flavor profile.

Draft at Moe’s Tavern in Logan Square. Cloudy golden pour. Aroma is Belgian yeast and green apples. Tastes funky, yeasty, apples, musty farmhouse, dank wet old apples. Funky tart finish. Nice. Saisonish.

Not a session beer in my opionion, but this is one of the beers that helped me transition from ciders into real beers. If your a cider drinker, I would recommend this.

Enjoyed this, but more of a dry cider brew than a beer. Nice and crisp and refreshing, with some sweetness to boot. Pretty good if you’re in the mood for something light and fruity.

Old rating. Bubbly fun. Crisp tart Apple, Belgian yeast, cider like, some white grape presence, highly carbonated, wife loves it. Pretty good.

12 oz pour from refrigerated bottle into shaker pint. Moderate gassy head quickly dissipated. Lots of carbonation, cloudy, pale golden. Nose is sweet apple-- cidery. A little spice. Mouthfeel is very and carbonated. Taste is a bit sweet, dry, and tart. Strong apple notes. Also pear, white grape, wheat and some spice. Maybe clove. Appropriate all around for a wit, but I?m not a big fan. Too thin and underdeveloped for me. Still, it’s refreshing and a different kind of fruit beer. Not as sweet as a cider or sour as a lambic.

Pours a hazy apple juice yellow with a thick white head that leaves lacing. Nose is faint fruit. Nose is Body is light. Taste is a crisp faint fruit. Very slight bitterness. 12 oz bottle in a variety 6-pack.

Poured from a chilled 750mL brown glass bottle into a wheat glass. Is it beer that tastes like apples or apples that taste like beer, is the question and it is both. Pretty darn refreshing, ’tis. A good, muddy golden hue to it. Another one of them beers best shared with beer friends, where maybe a descriptive discussion happens. And summer is but a few weeks away, too.

Had the pear version. A quite nice fruit beer, not too intense, well balanced. Pours a super bright orange with a thick white head. Smells of green apple, pear, citrus and wheat. Taste is creamy and smooth, with pear, citrus with a dryish finish. Had on tap at Hopmonk.
