COMMERCIAL DESCRIPTION
The brewmaster and passionate lovemaking fermentation Jerry Vietz has chained at least four phases of fermentation, in addition to incorporating finely selected spices, to obtain the desired balance of this rare Unibroue, dark and mysterious.

Aroma is spices: nutmeg, allspice and cinnamon; cherries, and pancakes. Pours hazy red orange with minimal head. Taste is very pleasant with a sweet cherry and spices following suit. Malty enough to balance out the spice and make this an easy to drink brew. Would have again.

In short: A moderately spicy and moderately fruity big burgundy ale. Decent Christmas beer
How: From a bottle at Hivernale Des Brasseurs 2012
The look: Dark burgundy body topped by a beige ring of foam
In long: Nose is moderately spicy with the usual mix of Christmas beer spices with cinnamon coming through the strongest. Also fruity esters coming through in the aroma. Taste has solid malt backbone, dark caramel, nutty chocolate, red grapes, dark grapes and a pleasant mix of spices that don’t take over the beer. Carbonation is a bit softer than what I got used from Unibroue. Alcohol is a bit apparent but not distracting. Far from a good Unibroue this was nonetheless a fun treat. My first beer at Hivernale Des Brasseurs, a nice beer festival but with a hefty ticket price of 100$, so let’s take a moment here to think about the less fortunate, those with gluten intolerance.

Appearance : Clear brown.
Aroma : Very spicy with lots of yeast. Light acidity with fruits.
Taste : Yeast and spices, some floral notes. Finish yeasty and spicy.
Overall : Slightly better than the cherry version. Nice yeast but still too spicy for my tastes.

On tap at Winter Warmer: Poured a deep dark color ale with a medium size foamy head. Aroma of spices with a good amount of candi sugar notes with light ester of typical Unibroue yeast. Taste is also a mix between some candi sugar with light dry fruits notes with some spices (cinnamon and coriander) with the typical yeasty Unibroue finish. Body is quite full with good carbonation and no apparent alcohol. Interesting though a bit too much residual sugar at the end of the day.

Verre de dégustation, provenant d’une bouteille de 750 ml, dégusté à l’Hivernale des Brasseurs 2012 (Montréal, QC). Arôme: Odeur d’épices avec une pointe d’alcool. Apparence: La couleur est ambrée foncée. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de caramel fruité et d’épices avec une pointe d’alcool. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Faible effervescence en bouche. Arrière goût légèrement fruité. (Rating #4156)

My Bottom Line:
This complex Belgian-style Strong Ale moves from cinnamon and mint spiciness to nutty chocolate malts before delving into a vinous fruitiness sometimes redolent of black cherries.

Further Personal Perceptions:
-A ring of foam circles the dark brown.
-The spicy nose is reminiscent of Cola at times.
-Sweet toffee also participates, trying to make everything gel.
-The spiciness is well integrated and multifaceted. It’s hard to pinpoint what was used.
-Alcohol tags along the vinous fruitiness and its light tartness.

En fût à l’hivernale des brasseurs 2012. Bière d’un brun foncé avec quelques reflets rouges et surmontée d’une fine mousse beige. Au nez elle est très sucrée avec des notes de menthe, de cerises, de levure et une pointe d’alcool. En bouche, la saveur est très sucée et similaire aux arômes avec des notes de bonbon à la menthe. Corps très liquoreux.

A dark reddish brown ale with a thin white head. In aroma, a sweet plum and molasses, light cherries, not bad. In mouth, a nice smooth sweet maple with plums, Unibroue yeast profile, very nice. Tasted at Montreal Winter Warmer, Feb. 25, 2012.

Drank at the 2012 Winter Warmer Montreal, on February 25. Dark reddish brown, thin head. Intense aroma of spices, cloves and coriander, very sweet. Taste of dominating spice and herbs, slightly sour aftertaste of ripe fruit. Yeah, it’s spicy but not impressive!
