330ml bottle. Appearance: Cloudy pale golden with a frothy white foam cap. Aroma: Strong clove phenols dominate over fruity esters of banana and pineapple. Taste: Sweet rich maltiness and banana esters up front. Strong clove phenols. Typical pear esters appear on the swallow. Motuthfeel: Medium body with some creaminess and moderately high carbonation. Not as carbonated as some other tripels, but also avoids alcohol heat. Finish: Clove spice on the swallow, but banana and pear esters longer long after. Overall: Aroma is good but maybe not as strong as some other world class tripels. Really well balanced flavor profile

Alcoholic and spicy notes, with a hint of cereal. Golden in the glass with a rich head. No distinguishable hops, instead, harmonious overall impression. Perfectly carbonated.

Pours a beautiful golden color with a bubbly white head. Amazing how the aroma spreads in the air when opened! Almost champagne like carbonation with notes of pear and grass. Very refreshing and deceptively strong.

Has it really been 20 years since I first drank this, when it was new? Seems it is. Deep golden amber body, crowned with an active white head. Belgian yeast fills the room on the pour, assaulting the nose. Some definite pepper notes round out the aromas. Fairly creamy mouth feel. On the tongue there is the aforementioned Belgian yeast, bananas, cloves, pepper, and yes a hint of alcohol, which really isn’t surprising. I like this beer a lot, but it isn’t a beer one could drink regularly, sporting that 9% abv.

Poured from a 12 OZ bottle into a pint glass. Aroma- Has a nice yeast aroma that is well balanced and not off-putting. Appearance- Pours a golden yellow with a thick white head. Taste- Fantastic flavor of yeast and malt, the ABV is well masked. Palate- A medium bodied mildly carbonated beer. Overall- A world class beer, this should be on everyone’s must try list.

This is a really good beer from the province of Quebec, Canada. Really fruity and subtile. But it’s 9% so you get drunk really fast before you even know it! Faite attention, be careful! ;)

Pours cloudy gold with a huge white head. Sour lacquer and pine needle aroma with yeasty notes. Triple umph tastes of alcohol, pine and some sweet notes too. A lot going on but more of a fight than a symphony. Oily with good carbonation. Not bad.

Chimay chalice. Been drinking a lot of tripels lately, both Belgian and otherwise and this one doesn’t match up well. I’m getting a pronounced metallic taste and a lack of complexity as well as a somewhat biting carbonation which seems artificial. As usual, I’m letting the beer warm up to bring out more flavor. Bought it an hour ago off an uncooled shelf in a store and rode it home in 55f weather in a bike bag, but as it warms up to room temps, it is more complex. Pretty fanciful map of Northern Quebec and Newfoundland on the label, an area which must be ’la fin du monde’ in bug season.

4/4/15 (Bottle) - Golden pour with generous white head, mild carbonation. Yeast and bread aromas, with a hint of citrus. Excellent taste of malts, yeast, somewhat sweet and balanced. Excellent feel, smooth, nice kick to it, and with the large bottle you are set for the afternoon.Overall excellent beer!
