Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle GTMW 2008 Tart, acidic aroma with berry and rich, sweet malt, and funk of course. I always forget to mention funk in my rating. Taste is tart, slightly sour berry, lemony and citric. Finish is smooth and a dearth of crispness. Kind of dull finish. Okay.

Special pouring during GTMW ’08 at 4 pm via 750 ml bottle. Pours a semi-clear orange amber lambic with a fizzy off-white head that slowly dissipates clean. Aroma of tart blackberries, dewberries, a touch of raspberries, yeast funk, and a touch of cardboard. Taste is tart berries, yeasty, some brett, and wooden oak. Finish aftertaste has a semi-sweet but dry character with a lingering yeast and blackberry flavor.

750ml bottle shared thanks to Ughsmash (thanks!). Poured a medium and cloudy orangish / amber color with an averaged sized, pinkish tinged, head. Aromas of blackberries, some funkiness, wood, other berries, and musty. Tastes of blackberries, vanilla, funk, wood, and musty. Light tart finish. This one grew on me the more I drank it.

750mL bottle. Poured crystal-clear medium orange with plenty of sparkly rising carbonation and a fizzy (yet well-retained) cap of pinkish-white head. The aroma picked up tart blackberry skins and lemon zest paired with dry, dusty old barn and wet blanket.. the fruit really shines here, and it presented itself well. The flavor opened with mild-to medium tart berry skins with a dry Brett wash over the middle of the tongue.. the back end picked up fresh blackberry seeds and was not unlike finishing off a couple overripe ones.. a hair more residual sugar right at the back along with grainy oak.. all in all quite tasty! Tart and well-carbonated on the palate.. not as gripping with the acidity as many, but this was charming in its own right.. faded off the finish unceremoniously and not with its best stuff. Excellent experiment!

750ml bottle courtesy of yjb. Pours a pinkish amber with a thin white fizzy head. Smells of sweet sugar, some blackberries, very perfumy, bretty, funky, wheat. Tastes tarte and dry with some decent underlying sourness. The blackberries lend a nice character to this beer. Palate is dry. Finish has a nice tarteness with some residual sugar. More of a sour ale hybrid than a lambic, but a great beer. I hope this brewer puts out more of these experiments.
