COMMERCIAL DESCRIPTION
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Peachy red pour with white head. Aroma is large sour berries. Super tart with subtle blackberry tones. Medium body with aggressive carbonation. very nice superman couldn’t drink a whole bottle though

Bottle at RBWG Asheville Grand Tasting. Pours hazy pink with a white cream head. Tart, jammy berry aroma, some definite acetic kick. Quite sour flavor with moderate sweetness, blistering tart berries, high acidity. Light to medium bodied with fine carbonation. Lip-pucker sour finish, loads of jammy blackberry. Ballsy.

Bottle, courtesy of b3shine-- thanks! Lovely deep ruby colour, with a soft pink head. Aroma is funky and fruity, and definitely sour! Stemmy blackberry fruit, very sour, moderately acidic (acetic, lactic). Dry sour finish. Delicious, quenching, gets the salivary glands flowing!

Pours a golden ruby with white head one finger height leaving moderate lacing. Strong blackberry aroma , hint of peach. Strong tart flavor. Medium sour finish.

Bottle sent to me many months ago by StFun - thanks dude!! Slight dark pink in color with just a little white head. Slight cheese in the nose, nice tart taste with some subtle berry character.

Bottle shared by Jeff - thanks! Damn, this is delicious! Clear reddish golden pour with a smaller head. Beautiful blackberry aroma, crisp clean and slightly tart flavor. This is excellent!

Looks like ‘fruit on the bottom’ yogurt but just the fruit part. dark purple slurry Nose obviously has blackberry but with hints of celery and strawberries and kale. Whoa. Intensely sour. it had that fizzy sprite pour that I’m used to with upland sours. Very sour, my tongue is starting to hurt as my taste buds sort of get on fire. Another upland that totally is too sour. I should stop trying these

On 06/18/2011. Hazy red body with a small pink head. Sweet blackberry and fruit aroma. Tart blackberry and fruit flavor with some citrus. Medium body with moderately high carbonation.

Sampled at bottle share - Smells like a mixed berry jam with some plum raison notes. Super sharp acidity, really nice and sour. Drinkability is on the low side for me but the four ounces that I had were perfect. Glad I got to try this.
