In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blueberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Clear reddish color with no head or carbonation. Nice aroma and flavor but no carbonation what so ever. Such a pity since the flavor is so nice.

Refrigerated 75 cl brown November 14, 2014 batch D-14 bottle corked and capped from shrubber82 poured into a tulip. Translucent red with medium pink head. Aroma is tart, medium body, medium carbonation, and good small-bubble lacing. Taste is oak and tart blueberry.

2015 bottle at a share. Had low expectations on this because of reviews, but I was blown away, along with the other people there. Pours a beautiful pink/purple/red mixture. clear, small head. Aroma of blueberry, grape, wood, tart, sour, funky, acidic, hay, grass. Flavor followed the nose. Acidic, blueberries and grapes, grass and hay, woody, tart and funky. Light body, thin texture, kind of over-carbed, but that’s really the only knock I can give it. Tart and dry to finish. Exceeds expectations and that’s always a plus!

Shared 750 ml. bottle poured to a snifter showing a hazed grape juice color, with a quickly diminishing layer of pink head foam to a bubbly ring and minimal spots of lacing. Settled down to a somewhat vinous look in the glass. The nose was mild yeast, blueberry, plum, and concord grape, tart & dry. The taste was similar, light to medium bodied, with low carbonation that gave the texture a thinner, watery feel. Flavorful Lambic that finished dry, with some tannic bitterness, but not impressed by the lack of lively effervescence.

750 ml bottle via trade. Bottled 11-13-14, batch 0-14. Pours a clear ruby-rose color with a small, fizzy rose-tinted white head that settles into a lasting ring. I had prepared my friends for the most sour one they’d probably taste all weekend, and it certainly was that, albeit not as aggressive as I’d anticipated. Blueberry, lemon, oak, grape skins, some pie sweetness, red wine vinegar, and flower petals. Light-bodied, with moderate carbonation and a sour, acetic, floral mouthfeel that gets more sour as it crosses the palate. When it first hits it’s fairly mellow, but it hits you by the end. Still - not the most sour Upland fruit lambic. At least not this batch.

Really nice blueberry aroma, great to style. Palate a little thick but flavor of blueberry and tartness were very good. Finishes with obvious blueberry taste.

Thanks Jason, pours a deep violet color with a light pink head. The smell is tart fruit, dark berries, lactic acid. The taste is blueberry, tart lactic notes ending dry and crisp with mild wood. Light in body with active carbonation.

Many thanks to Rian! Nice fruity sourness in the beginning. The beer starts sour-fruity. Not too complex. Nice fresh-sourish with fruity hints. Not too intense, abut boring with mouldy hints. Sourish and easy to drink aftertaste with blueberry hints. Ok but not overwhelming.
