COMMERCIAL DESCRIPTION
Thursday hallmarked our first bottling of another type of long aged oak beer with a variety of microorganisms in play . The beer is still hard for any of us to really define, it’s really one of a kind. At 8.5% ABV, it would probably be most akin to a strong Flander’s Brown. A spice blend was involved as well as some dark Belgian Candi Sugar during the kettle boil. That part we controlled. The rest was up to Brettanomyces, Lactic Acid Bacteria, and whatever else decided to visit the fermentation as we left each barrel open to air for an intentional short period of time. As to the name, he’s a demon, we named the beer after a demon. Space Dragon was too grade school.

Bottle shared by madbeerbaron. Thanks ben. Pours brown with an almost khaki head. Aroma is slightly sour and a little fruity. Fermented black cherry with some grape skin. Taste is light tart. A little vinegar and red wine barrel with some nice Michigan cherry and a strong sweet malt backbone. Pretty darn good.

Bottle shared by madbeerbaron...thanks Ben! - Pours murky mahogany with a thin tan head. Nose is plasticy brett and a bit of malty sweetness. Lots of cherry in the taste, lightly sour, and a bit of vinegar tartness on the finish. Soft in the mouth. Very nice.

750ml bottle shared by Ben, pours a dark brown with an off white head, the aroma has a nice amount of brett with a little bit of dark fruit and a sweetness at the same time, the flavor has a soft sour front end with some of the oak vanilla coming through in the finish, pretty different, some chocolate tones mixed in with the sourness too, good stuff.

750ml bottle shared at Mike’s sour/brett tasting. Pours dark brown with a tan head. Aroma has loads of malt sweetness, balsamic, sour. Taste is malty sweet and tart/vinegar. thinner bodied. I don’t think this held up very well compared to a fresher bottle.

750mL b1 thanks to juiceisloose. Pours a clear deep ruby, medium tan foam. Nose is black cherry, red wine barrel, jammy. Taste is lightly acetic, black cherry, red wine, spices, savory steak. Palate is superb- vinous, lactic, citric, silky, fatty. Really nice oud bruin style sour. My favorite.
