Thursday hallmarked our first bottling of another type of long aged oak beer with a variety of microorganisms in play . The beer is still hard for any of us to really define, itís really one of a kind. At 8.5% ABV, it would probably be most akin to a strong Flanderís Brown. A spice blend was involved as well as some dark Belgian Candi Sugar during the kettle boil. That part we controlled. The rest was up to Brettanomyces, Lactic Acid Bacteria, and whatever else decided to visit the fermentation as we left each barrel open to air for an intentional short period of time. As to the name, heís a demon, we named the beer after a demon. Space Dragon was too grade school.

Draft. Poured a clear ruby brown color with an average frothy off-white head that mostly lasted with good lacing. Moderate to heavy sour yeast and dark candy aroma. Medium to full body with a sticky texture and flat carbonation. Medium to heavy sour flavor with a medium to heavy sour & sweet finish of moderate to long duration. This is a solid beer for style.

Pours a very hazy, dark amber/chestnut brown color with a one finger beige head that quickly settles into a thick, lasting ring. Splotchy lacing left behind. Sweet vinous aroma with earthy oak, vanilla, roasted malts and vinous dark fruit notes. Strong red wine barrel with toasted oak, red wine, dark grape and cherry. Underneath, thereís some roasted dark malt, vinous fruits, musty brett and subtle acetic acid. Medium bodied with tart, acidic sournesss along with toasted oak and vinous dark fruit flavors. Tart with dry, musty brett and lactic funk followed by caramel malt, toffee, cherry, grape and currants. Light and easy to drink which is surprising considering the complexity. A very solid dark sour from Upland.

750 ml bottle, batch 1. Pours a deep, dark mahogany brown color that is topped by a small layer of tan colored foam that quickly fades to a thin film and leaves steaks of lace on the glass. The aroma shows notes of sour dark fruits, caramel sweetness, some Bretty funks, tannins, and wet oak. There is also some acetic sourness and vinegar as well. The flavor follows with more sour dark fruits with plums, berries, and dark cherries being prominent and followed by some oak tannins, acetic funk, and a touch of caramel sweetness. Medium bodied with balanced carbonation and puckering on the mouthfeel that leads to a dry, tart, and fruity finish. Solid sour ale that shows a wide range of flavors.

Large shared bottle. Pours very dark brown with a minimal head. Nearly black in the glass. Very tart ... even smells tart. High ABV according to the flavor, but this is not evident in the medium body. Very flavorful. Near puckering tart.

Small greige-reddish head over deep garnet beer, well-carbonated. Mint, lavender, chlorophyl chewing gum. Sourish, faint vegetables, mango. Finish is mint again. Very carbonated, body gets hidden by the CO≤ & sour character. If they didnít print the blurb, one would be afraid to ask what they did, here. The mint is weird, but in the end, the beer presents some charm.

2/21/15. Bottle during RBWG 2015, and older vintage Iím told. Murky caramel pour with a small khaki head, mild lacing. Funky aroma, tart acetic acid, balsamic, caramel, toasted caramel. Doughy flavor, caramel, but also light funk, oak, acetic acid. Interesting, not bad.

Pours a murky brown with an off white head. Aromas of vinegar, acetic acid, some cocoa powder. Taste is sour with an underlying roasty flavor. Really surprised me. Thought this would suck but didnít.

This poured a semi cloudy lighter brown with an off white head. Aroma was of dark fruits, light acetic acid, and eminent juice. Flavor similar, but sourness is toned down significantly from their other sours and leaves room to appreciate the other complexities of the beer.

Somewhere between a 2 and 4oz bottle pour at SAVOR 2015ís Saturday night session. Poured a cloudy reddish-brown color with a small tan head. Aroma was notes of hay, citrus, coffee. Flavor was roasted, dark fruit, with a light funky character.

Shared 750 ml bottle poured to snifters at Timís 40th. Displayed a murky, brownish mahogany color, with a modest layer of tan head foam, and sheet-like lacing that didnít necessarily stick, but left some light spots on the glass. The nose presented sweetness, but was mainly sour, with subtle spice, light bretty funk, and some woodiness & tannins. Medium+ bodied, aided by lively carbonation, the taste also contributed tart fruitiness as berries, dark cherry & plum, well integrated alcohol, and finished with a pleasant dryness. Very nice!
