COMMERCIAL DESCRIPTION
Thursday hallmarked our first bottling of another type of long aged oak beer with a variety of microorganisms in play . The beer is still hard for any of us to really define, it’s really one of a kind. At 8.5% ABV, it would probably be most akin to a strong Flander’s Brown. A spice blend was involved as well as some dark Belgian Candi Sugar during the kettle boil. That part we controlled. The rest was up to Brettanomyces, Lactic Acid Bacteria, and whatever else decided to visit the fermentation as we left each barrel open to air for an intentional short period of time. As to the name, he’s a demon, we named the beer after a demon. Space Dragon was too grade school.

Courtesy of daknole. Bottle pours deep brown with a khaki head. Aroma shows notes of chocolate, raisin, and sour black cherry. Flavor shows the same, with plenty of lactic goodness supported by a fairly signifcant caramel backbone and rounded out with candi sugar and some berry sweetness. Also present are touches of vanilla and a decent amount of oak. Pretty well balanced for the most part.

750mL bottle, pours a murky dark mahogany / borne with a beige head. Nose is authentically sour brown, with tart dark fruits, Worcestershire sauce, earthiness and some yeast. Flavour is interesting - it’s a very wild version of a sour brown. Notes of dry tart dark fruits, wild yeast, and some earth. Not sure how I feel about this one. It’s very earthy and wild, with no residual sweetness. Interesting stuff, but not overly enjoyable.

Cloudy brown with virtually no head. Aroma is herbal, slightly earthy, sour fruit. Medium bodied, tart on the palate with a slightly astringent finish. Flavours are chamomile, beets, sour dark fruit, hint of chocolate and blackcurrant.

Bottle: Thanks, Ed. Deep ruby with an opaque center; a gray tinted collar is the only thing left on top. Aroma loaded with vinous, borderline boozy wine notes, deep red grapes, black cherry, & bruised currant. Taste has lots of cherry skin acidity with a good helping of spicy oak. Touch of vanilla? Some lemon flesh mid-palate, leading to a wine-heavy finish that once again seems a little boozier than I’d prefer for a wild ale. It has a bit of vinous heat. Cherry, red grape skin & wood laden aftertaste.

Dogbrick (7567) - Columbus, Ohio, USA - JUN 1, 2014
Sample during the Secret Barrel Society tour on 05/24/2014: Slightly murky brown color with a thin off-white head that diminishes quickly to an outer ring. Spotty lacing. Aroma of berries, malt and yeast. Medium-bodied with flavors of tart berry, earthy yeast and malt. The finish is mildly sour with an oak and berry aftertaste. Pretty good overall.

750ml bottle shared by someone at RBWG 2011 originally from notes (had a couple times since). Pours a cloudy brown color with a small soapy beige head. The aroma and flavor have light spice and earthy notes, mild vinegar, tart dark fruits, lactic, interesting blend. Soft carbonation that may be affecting the overall taste.

bottle shared by tom10101, thanks man. pours hazy dark copper-red with a small yet reviving light beige head, some lacing. tart cherries, spices, very spicy in fact, bourbon, also red wine barrel, as well as raisins, red grapes, plums, other red fruitiness, dark candi, brown sugar and molasses, very woodsy. moderate carbonation, medium body - oily, bit sticky and sweet, grassy-spicy and astringent-tannic finish. very nice. another good sour from upland!

Bottle 750ml. Pours very dark burgundy with very low beige head. Aroma is of dark fruits, wood, sourness, flowers, tea, incense, mint. Taste is of dark fruits, slight sourness, blackberries, a tad sweet. Palate: Light-medium body. Overall: Very nice fruits in aroma. Nice incense, awesome tea.

Pours a dark red with a medium white head that leaves some lacing. Aroma is spicy, fruity and is moderately acetic. Taste is lightly sweet, tart and really fresh. Mouthfeel is juicy, carbonation a bit low. A very good Flanders Red!

Bottle (750 ml). Thanks to Levifunk for this one! Murky brown with a small beige ring of foam and little to no lacing. Aroma is of mint, tea, blackberries, red fruits (raspberries), candi sugar, wood and some maltiness. Taste is moderately sweet and quite fruity with blackberries/raspberries, tea, mint, malt, light spices and wood. Medium body. Medium carbonation. Somewhat dry finish. Very good Flander’s Red/Brown. Not to acetic. Upland’s fruity beers are amazing. Really tasty.

Bottle. Dark brown colour with a beige head. Aroma is brett, wood, malt, hop, caramel. Flavour is is brett, wood, malt, hop, caramel, yeast, dried fruit. Nice beer.
