COMMERCIAL DESCRIPTION
Previously known as Gilgamesh. Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.

Bottle; Pour is murky brown, with a hint of amber into this snifter - The head is fine bubbled khaki, with two fingered head that retains fairly well here. The nose is deep cellar, caramel and brown sugar, moving to feint earthen oak presence. It’s a touch jarring, frankly. Thankfully, the flavor profile is more appealing by my estimation. It is initial light tart, with some acetic presence, moving to dark cherry notes, moving to oak tannins. Some lactic notes come through, with lingering spice and caramel toffee notes. Bourbon presence is meek at best - but I suppose that’s alright - Anyway - it’s a nice attempt.

750mL bottle pours a murky dark brown with a small sparse bubbly khaki head. Fairly large oak and bourbon presence in aroma, sour lactic, raisin and caramel. The flavors of the sweet oaky bourbon work really well with the tart and sourness, caramel and brown sugar with light corn in the finish. Pretty interesting stuff!

Bottle from a recent tasting. Thanks for splitting. Listed as Gilgamesh. A: Brown coloration with a creme colored head. Lacing. N: Acetone, vinegar, grapefruit, lemon zest, and a hint of cocoa and maybe coffee, leather, and tobacco, as befits a blacker sour. T: Tart. Somewhat sweet. M: Medium body, medium carbonation, no alcohol. O: This works pretty well for a dark sour - which I tend to find have too many factitious sides. This one works pretty well, emphasizing the tart over the bittersweet elements.

A vintage bottle from the original release ("Gilgamesh") finally was shared with some friends during a sour tasting. A top notch sour proves that Upland still has their "A" game. A special occasion beer is best shared with people who enjoy great beer thanks to a high price tag. Even so you should have an excellent time.

Aroma / Appearance - A cherry red base shimmers at it absorbs about half the light. A wispy beige head sits thinly above like overcast skies. Vinegar, musty books, cherry candy left open in a bag for a month, and a strong tartness all add complex aged notes.

Flavor / Palate - Musty books and chocolate coat the tongue with a rich layer of complexity. The finish of acidity brings a stark vinegary touch. In the spirit of other Upland sours it shines from start to finish. If you’ve got a friend with a bottle convince them to bring it to the next tasting.

Hazed brown pour with light off white head and lace. Aroma is sour bretty funk. Flavor is light sweet chocolate and a fairly intense dry bretty funk finish. Medium bodied with good carbonation. pretty funky

750 mL Gilgamesh bottle (2011). Aroma is rather fruity with some nice cherry and berry character along with some lighter raisin and fig notes. Medium light oak notes with light alcohol spice. Medium caramel and toffee with faint toasted bread and chocolate notes. Light sweetness. Pours a murky, ruby brown with some amber notes and a thin, somewhat large, tan head that recedes fairly quickly to the edge where it lingers. Light lacing and moderate legs. Flavor has a moderate acidic character with a medium to medium light acetic note. Moderately strong fruit notes of cherries, berries and plums with lighter notes of raisin and prune with hints of fig. Light bitterness with medium light oak notes. Medium light alcohol spice in the finish that is not as well hidden as in the aroma. Some toffee and caramel notes in the finish with hints of chocolate. Mouthfeel is medium full bodied with medium carbonation. Low astringency and medium low to low alcohol warmth. Overall, a surprisingly good Flander’s style beer. Nice fruit and oak complexity and the alcohol is very well hidden. Really nice, complimentary malt character with great complexity.

Bottle - Vintage 2012 - Mellow sour cherry and oak notes. Cloudy copper with a thin head. Lots of balsamic tartness but still nice.
