COMMERCIAL DESCRIPTION
Previously known as Gilgamesh. Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.

Appearance: Pours dark beet red with a white ring and a few swirls. Visible rising bubbles.

Aroma: Sour red fruit, soaked oak barrel, alcohol, funk.

Taste: Sour grape, wood, bourbon barrel. A little red wine vinegar. While there was apparent booze barrel character, the alcohol of the beer was well hidden for 10.5%.

Mouthfeel: Full bodied. Very carbonated.

Overall: One of the best executed sours Iíve had from Upland, even though I havenít tried them all. The cross between the red sour ale and the bourbon barrel scared me at first, but worked really well together.

Pours a rather dark red/amber color without much in the way of head formation (or carbonation). A bit more bourbon and vanilla than expected. Some definite acetic qualities with some red wine vinegar and dark fruits. A little caramel sweetness, too. Like the nose, sweet toffee/caramel and barrel notes (bourbon and vanilla). The sourness picks up as it warms and the vinegar is able to come through.

UPDATED: MAR 25, 2012 Nose is nice - smells like a flanders red - balsamic vinegar with a touch of bourbon. Hazy dark amber with white foam. Taste is pretty good - nice balance of tart and sweet vanilla. Subtle, balanced and tasty. Palate is medium bodied and softy carbed. Glad I got to try this.

Bottle provided by me, poured into my Portsmouth tulip. A hazy honey brown in color, half fingers worth of light yellow head. Nose isnít that great, some lactic sourness, cherry, and slightly metallic. Flavor is an upgrade, nice cherry sourness and vinegar. The ending is a little off-putting flavor wise. Smooth, spritzy mouthfeel, long finish, good acidity. Decent Flanders, nothing special. Not sure if this is worth the price tag.

750 mL bottle graciously shared by PaulUnwin. Cheers, Paul! Pours a hazy red-brown with an off-white head. Nose is malt, some sugar, some vinegar, oak, cherry, and slight chocolate. Flavor is similarly deep: malt, chocolate, slight vanilla/ bourbon, candi sugar, and tart fruit. An interesting and varied blend of sweet and sour. Medium in body and very interesting overall.
